I felt the same after several years doing keto or thereabouts (no one really does keto since for 99% of people they have no way to accurate measure their ketogenic state).The gentleman is correct.
I needed to reduce my cholesterol and managed it by going veggie.
It’s genuinely the best thing I ever did (to my surprise). I’ve never felt better. But dammit, after many years I’m suddenly having urges to eat all sorts of things now.

It is complicated.Cholesterol is surprisingly complicated and more so for me where it seams to be genetic. So it turns out that the good cholesterol is very useful (I think it helps remove the bad cholesterol) and because that actually dropped too much, my risk outcome actually increased.
I need to get tested again. Hopefully increased fermented dairy and olive oil will have increased my good cholesterol without increasing the bad.
Other things that are great for this are high fibre diets and increasing muscle mass through strength training.
It is complicated.
And very individual as some people are very responsive to it.
I personally don' understand enough to understand how healthy vegan eating can increase cholesterol. Certainly most of those advocating it suggest otherwise. But who knows!
A lot of vegans eat meat substitutes and use hydrogenated oils or coconut oil for cooking, all of which are high in the specific artery clogging fat. Just a thought! I haven't read your journey, but fiber increase (oats, high fiber bread, beans, and veggies/fruits) can help lower it. I'm friends with a few vegans who I admire very much, but there's a lot of trash in their diets if they're not careful.I can tell you I was very disappointed!!

I did huge amounts of reading. Now it’s possible the cheese was unnecessary. Maybe the weights and olive oils might be enough. Plus it could have been a blip, when I increased.

(this post popped up for me in a preview so I’ll say I’m not in the Uk!)That’s a valid point.
But in my case, I appear to simply be unlucky. I have a huge variety of actual whole-food. I’m not keen on meat substitutes. Oats, pulses, seeds, nuts, beans, shrooms etc are the way to go …and taste great.
Olive oil for cooking normally. Herbs and spices for flavour.
My breakfast has 12 different ingredients. I virtually never add sugar or salt. Some salt is required for sauerkraut and kimchi but it’s considerably cheaper and healthier to make your own. And actually really easy.
Most of my meals are vegan still. Everyone says it’s really hard to be vegan, but it’s not really. I batch cook some meals that super healthy. And I love salad. In a typical week I will have over 30 different ingredients. If I were less lazy (and I am lazy!) I’d do better than that. My biggest expense is probably nuts and berries.
I get seriously BORING on this subject, so I’ll say sorry now.
But you are 100% right. Many vegans have appallingly unhealthy diets. I kinda assume it may depend on why they are vegan. For me it was health. But if you are about saving the environment or worried about animal cruelty then I guess they might be going for quick wins from ready meals.
