Recipes!

could I please have the recipe?

To make two 1-pint puddings (remember: Imperial measurements throughout)

hi i use a recipe from my Gran, which is no real recipe the kids usually just throw in what they like stir then we steam the thing & leave it to 'mature' if that's the right word till xmas.

But here are a couple of recipes you could try:
½ pound (lb) raisins
¾ lb currants
½ lb sultanas
½ lb sugar (or less)
¾ lb shredded suet (can be vegetarian; see note below)
½ lb breadcrumbs
¼ lb crystallised peel
2 teaspoons (tsp) cinnamon
2 oz almonds (chopped, but not too small)
1/3 cup flour
1/3 pint milk
3 large eggs (beaten)
Brandy
Juice and rind of 1 lemon
1/3 of a nutmeg

Mix and stir well.
Place in pudding basins, and cover with cloths or buttered greaseproof paper, tied tightly in place with string.
Steam for 7 hours and keep till Christmas day.
To prepare for serving, steam for 2 hours. Times can be reduced by using a pressure cooker.

Suet can be difficult to find in some countries, e.g. the USA. Butter is an excellent substitute, but should be frozen and then grated to ensure that it mixes well.
It was common practice to include small silver coins in the pudding mixture, which could be kept by the person whose serving included them. The usual choice was a silver 3d piece (the threepence), or a sixpence. However this practice fell away once real silver coins were not available, as it was believed that alloy coins would taint the pudding.
Once turned out of its basin, the Christmas pudding is traditionally decorated with a spray of holly, then dowsed in brandy, flamed, and brought to the table ceremonially - where it should be greeted with a round of applause. It is best eaten with brandy butter, cream (lemon cream is excellent) or custard. Christmas puddings have very good keeping properties and many families keep one back from Christmas to be eaten at another celebration later in the year.

Or this one:

8 oz moist sugar (use soft brown )

8 oz chopped suet or modern day equivalent

8 oz sultanas cleaned

8 oz raisins halved and stoned

4 oz currants washed and dried

4 oz shredded mixed candied peel - Cut your own or use ready cut

4 oz of plain flour

4 oz breadcrumbs

2 oz almonds blanched and shredded

the grated rind of a 1 lemon

3 eggs

a salt spoonful of nutmeg grated

half a teaspoon of salt

quarter pint of milk

1 small wineglassful of brandy (optional)

Mix all the dry ingredients together, stir in the well beaten eggs, milk and brandy (if used).

Turn the mixture into 2 well greased basins, and steam from 5 to 6 hours.

Time 5 to 6 hours.

Sufficient for 8 or 9 persons.

Apart from Torchwood, my British pleasure at the moment is coming from Strictly Come Dancing. LOL, of course it always puts me in a good mood when it is on, but have to say I have always seen Brendon Cole (yes, I know he is a Kiwi but does the show each season) as being rather Dom material in so many ways, and then tonight they show him spanking his saucy partner's bottom in practice and her reminding him they can't do that on the night!! Hmmmm, that man can dance and what is more admirable is he is a man of principle and doesn't back down when the heat gets turned on him for being outspoken on everyone's behalf.

My family wouldn't watch Strictly Come Dancing with me when I went home last weekend becuase I pull apart everyone's dancing- I'm a perfectionist and some of them aren't very good, why should I sit there pretending they're all prodigies?!

LOL, well Emma is not good, though for some reason she is getting high marks after getting told week after week her footwork is bad. Of course it was explained they can't be expected to be good in all areas but I figure if your footwork is shocking in a dance comp you shouldn't be praised and get high marks week after week....the power of being a former Spice Girl.

The thing that pisses me off is that these women are all supplied with goreous parteners and there is NO CONTACT! Honestly, I spend my Sunday afternoons pressed up against big sweaty uggers (all lovely men of course) and the can't bring themselves to get close to the gorgeous bloke driving them around the floor.

LOL, I think Claire and Brendon had quite a lot of fun making contact this week....pity they were told to tone down the dance by the producers. And of course Ray doesn't have much problem in that close department either but seems Matt is seriously embarrassed about being asked to grab Lilia's butt even though his girlfriend came into rehearsal to try and loosen his inhibitions. And of course Mark was as usual dashing though they got stuck together and had to redo it. I think I will be rerunning if a few times this week here and there for escapism purposes.

What does this mean "steam for 7 hours"?

And then there's the question of making it like now and then keeping it until Christmas... How does this work? Where do you keep it? How do you keep it?

This has me really kinda confused but I'd like to do it for this Christmas with my kids. And are there any shorter recipes? LOL both of those are kinda involved.

Don't you have a steamer for your veggies? If not it goes in a basin with muslim round it in a pan of boiling water which will need to be kept topped up so it doesn't boil dry.


And then there's the question of making it like now and then keeping it until Christmas... How does this work? Where do you keep it? How do you keep it? It stays in its basin covered till its needed as its a rich fruit recipe it lasts for a very long time. Its kept in a cool dry place.
