mmmmmmm Love Chili and the crisp fall weather is made for it. Must be 6000 kinds of Chili. So give me your recipe!

P.S. Real Chili has no form of pasta or psghetti!!!!!!!!!!

Down here in Cajun country, we spice the hell out of it with cayenne and serve it on rice.

Lonesome Cowboy Chili

4 lbs. round steak
1/2 c. all-purpose flour
1 tsp. salt
1/2 tsp.cracked black pepper
5 Tbsp. olive oil
40....yes 40 cloves of garlic peeled
1c. beef broth or water
1/2 c. whiskey
6 to 10 dried small red chili peppers

cut up steak in cubes....bite size. Combine flour,salt and pepper ; roll in the beef mixture. heat 4 Tbsp. oil in a deep, heavy skillet; brown the meat; remove from skillet.
reduce heat and add 1 Tbsp. oil and garlic; cook until garlic is golden. Add broth, whiskey and peppers to garlic. Put browned meat on top of garlic; cover and cook slowly until beef is tender, approx. 1 hour. ...6 to 8 servings.


Then stay away from humans who have not had the chili!!!!:eek:
 
just started the simmering as we speak.


Decided to do chili this morning when it was 45 degrees out. Now it is in the upper 60's but none the less, it is cooking.
 
5 Bean Chili

5 kinds of dried beans your choice, such as pinto, cranberry, garbanzo,kidney,navy etc. etc. 1/2 pound each.
2 lbs. lean ground beef
1 large onion chopped
2 Tbsp. olive oil
2 cloves garlic; finely chopped
2 jalapeno peppers, seeded and finely chopped
2 tsp. cinder vinegar
1 15 oz. can tomato sauce
1 14 1/2 oz. can whole tomatoes, cut up
1 c. bean liquid........(from cooking the beans)
1 to 2 Tbsp. chili powder.....or to your taste
2 tsp. dried oregano
1 tsp. salt
2 tsp. ground cumin
1/2 c. honey

soak beans overnight in water, then simmer 2 hours until tender. Drain, reserve 1 c. liquid.
Cook beef in a large skillet, brown and remove
in a chili pot add onion,olive oil; cook stirring some till onion is brown
add peppers, vinegar cook 1 minute.
add meat, tomato sauce. tomatoes,and i cup bean liquid; stir
add chili powder,cumin,oregano and salt; stir in honey.
simmer to mix flavors; 1 hour........eat
 
If you do not like heat burning up your mouth.....add one bottle of tabasco sauce. You will feel the heat from inside not in your mouth.
I use it instead of the chili pepers, unless you really want hot chili!!

sourdough bread recipes anyone.....i have some of those too, bread rolls, bisquits.........
 
for you non meat eaters

Baked Root Veggies

5 to 7 pounds vegatables (spuds,onions,carrots,turnips,rutabaga,parsnips,beets)

2 Tbsp. broken walnut meats
3 Tbsp. parsley sprigs
1/4 c. chopped onion
1 med. garlic clove, crushed
1/2 c. butter melted
1 Tbsp. olive oil
1 to 2 tsp. prepared horseradish


pare and scrape all veggies, cut into large chunks and hold in cold salt water until ready to bake. To speed cooking precook veggies in boiling water for 10 minutes.
grind nuts in a food processor; add parsel, onion and garlic....chop very fine. Add to melted butter, olive oil, and horseradish. set aside
Arrange veggies in (drained) ina baking pan. Spoon butter mixture over veggies. Bake at 375 for 45-60 minutes.....baked pre-cooked veggies for 30 minutes......sprinkle with parmesian...........mmmmmmmm
 
Rope Bread

1 1/2 packages dry yeast
2 c. lukewarm water
1 Tbsp. sugar
1 1/2 tsp. salt
6 t0 7 c. all purpose flour
Sesame or poppy seeds


Soften yeast in water.......add sugar and salt. Lewt it stand till bubbly.
Beat in the flour, 1 cup at a time, until smooth dough is formed.
Turn out onto floured surface; cover and let it rest 5 minutes.
Knead dough, adding flour as needed, until dough is soft and elastic, about 10 minutes.
Put dough in a big buttered bowl, turning to butter the top. Cover and let rise for1 and 1/2 hours in a warm place till dough doubles size.
Turn dough out on a floured (lightly) surface. Punch down and let it rest 5 minutes.
Cut dough into 3 pieces
then roll each into 12 inch strips, twist strips together, turn under the ends and place into a greased 10 x 7 loaf pan.
Sprinkle with seeds. place in a "cold" oven. Put a pan of boiling water under the rack under the loaves.
Set oven to 400 degrees and bake loaf for 60 minutes.........
 
Just finished a bowl of it. mmmm

Add a dash of worchestire (sp) (too lazy to use spell check) sauce.
 
Try 2 tbsps. of coco powder in your chili pot.....mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm
