Filled Chocolate Cookies
Ingredients:

* CREAMY STRAWBERRY FILLING(recipe follows)
* 1-1/4 cups (2-1/2 sticks) butter or margarine, softened
* 2 cups sugar
* 2 eggs
* 2 teaspoons vanilla extract
* 3 cups all-purpose flour
* 3/4 cup HERSHEY'S Cocoa
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 cup milk

Directions:
1. Prepare CREAMY STRAWBERRY FILLING; refrigerate.

2. Heat oven to 350°F. Beat butter, sugar, eggs and vanilla in large bowl until fluffy. Combine flour, cocoa, baking soda and salt; add alternately with milk to butter mixture, beating until mixture is well blended. Drop by lightly heaping tablespoons onto ungreased cookie sheet.

3. Bake 11 to 13 minutes or just until cookies are puffed and soft-set. Remove from cookie sheet to wire rack; cool completely.

4. Spread bottom of one cookie with about 1 tablespoon filling; cover with another cookie. Repeat with remaining cookies and filling. About 2-1/2 dozen filled cookies.

CREAMY STRAWBERRY FILLING
1 container (8 oz.) soft cream cheese with strawberries
2 tablespoons butter or margarine, softened
1 tablespoon strawberry spreadable fruit
1/4 teaspoon vanilla extract
Dash salt
1 lb. (3-3/4 cups) powdered sugar
Red food color (optional)

In small bowl, beat cream cheese and butter. Add spreadable fruit, vanilla and salt; beat until blended. Gradually beat in powdered sugar. Stir in food color, if desired. About 2-1/2 cups filling.

'Le Chocolat' French Toast
Ingredients:

* 3 eggs
* 3/4 cup milk
* 3 tablespoons sugar
* 2 tablespoons HERSHEY'S Cocoa
* 1/4 teaspoon vanilla extract
* 1/8 teaspoon salt
* 1/4 teaspoon cinnamon(optional)
* 8 to 10 pieces thickly sliced bread
* Powdered sugar(optional)
* Pancake syrup(optional)

Directions:
1. Beat eggs, milk, sugar, cocoa, vanilla, salt and cinnamon, if desired, in medium bowl until smooth.

2. Heat griddle or skillet over medium-low heat. Grease griddle with margarine, if necessary.

3. Dip bread in egg mixture. Place on griddle. Cook about 4 minutes on each side. Serve immediately with powdered sugar or pancake syrup, if desired. Garnish as desired.

Makes 8 to 10 pieces of French toast.
 
Spiced Cocoa Seasoning
Ingredients:

* 3 tablespoons HEATH BITS 'O BRICKLE Toffee Bits
* 8 tablespoons paprika
* 1/2 teaspoon cayenne pepper
* 5 tablespoons black pepper
* 6 tablespoons onion powder
* 3 tablespoons salt
* 2-1/2 tablespoons dried oregano
* 2-1/2 tablespoons dried thyme
* 3 tablespoons HERSHEY'S Cocoa

Directions:
1. Place toffee bits in food processor or blender. Cover, process until toffee bits are very fine.

2. Combine toffee, paprika, cayenne peper, black pepper, onion powder, salt, oregano, thyme, and cocoa in medium bowl.

3. Store in air tight container in cool dry place for up to 6 weeks. Apply as a dry rub or seasoning for poultry, pork, beef, seafood, salads, soups, or vegetables.

Makes about 1-2/3 cups seasoning.
 
Berry Loaf
Ingredients:

* 2 cups all-purpose flour
* 1 cup sugar
* 1-1/2 teaspoons baking powder
* 1 teaspoon salt
* 1/2 teaspoon baking soda
* 3/4 cup orange juice
* 1 teaspoon freshly grated orange peel
* 2 tablespoons shortening
* 1 egg, slightly beaten
* 1 cup chopped fresh cranberries
* 1 cup Semi-Sweet Chocolate MINI Chips
* 3/4 cup chopped nuts
* POWDERED SUGAR GLAZE(optional, recipe follows)

Directions:
1. Heat oven to 350°F. Grease 9x5x3-inch loaf pan.

2. Stir together flour, sugar, baking powder, salt and baking soda in large bowl. Add orange juice, orange peel, shortening and egg; stir with spoon until well blended. Stir in cranberries, small chocolate chips and nuts. Pour batter into prepared pan.

3. Bake 1 hour and 5 to 10 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pan to wire rack. Prepare POWDERED SUGAR GLAZE, if desired; spread over top of loaf. Cool completely. 1 loaf (14 servings).
POWDERED SUGAR GLAZE: Beat 1 cup powdered sugar, 1 tablespoon milk, 1 teaspoon softened butter and 1/2 teaspoon vanilla extract in small bowl until smooth. (If thinner glaze is desired; add additional milk, 1 teaspoon at a time.) About 1/2 cup glaze.
 
Chocolate Chip Banana Bread
Ingredients:.....mini or regular chips..your preference

* 2 cups all-purpose flour
* 1 cup sugar
* 1 teaspoon baking powder
* 1 teaspoon salt
* 1/2 teaspoon baking soda
* 1 cup mashed ripe banana(2 to 3 medium)
* 1/2 cup shortening
* 2 eggs
* 1 cup Semi-Sweet Chocolate Chips
* 1/2 cup chopped walnuts

Directions:
1. Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan.

2. Combine all ingredients except small chocolate chips and walnuts in large bowl; blend well on medium speed of mixer. Stir in small chocolate chips and walnuts. Pour batter into prepared pan.

3. Bake 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack. 1 loaf (18 servings)
 
Cinnamon Chip Muffins
Ingredients:

* 2 cups all-purpose biscuit baking mix~~~~~~may sub sourdough mix
* 1/3 cup sugar
* 2 tablespoons vegetable oil
* 1 egg, slightly beaten
* 1 cup Hershey Cinnamon Chips
* 2/3 cup milk

Directions:
1. Heat oven to 400°F. Grease or paper line 12 muffin cups (2-1/2-inches in diameter).

2. Stir together baking mix, sugar, vegetable oil, egg, cinnamon chips and milk in medium bowl just until moistened. Divide batter evenly into prepared muffin cups.

3. Bake 15 to 18 minutes or just until browned. Cool slightly; remove from pan. 12 muffins.

Pumpkin Bread
Ingredients:

* 3-1/2 cups all-purpose flour
* 3 cups sugar
* 2 teaspoons baking soda
* 1-1/2 teaspoons salt
* 1 teaspoon ground cinnamon
* 1 can (15 oz.) canned pumpkin
* 1 cup vegetable oil
* 2/3 cup water
* 4 eggs
* 1-2/3 cup (10-oz. pkg.) Peanut Butter Chips
* 1 cup chopped nuts
* 1 cup raisins(optional)

Directions:
1. Heat oven to 350°F. Grease and flour three 8-1/2x4-1/2x2-1/2-inch loaf pans.

2. Stir together flour, sugar, baking soda, salt and cinnamon; set aside. Stir together pumpkin, oil, water and eggs in large bowl; gradually add dry ingredients, stirring until well blended. Stir in peanut butter chips, nuts and raisins,choc chips if desired. Pour evenly into prepared pans.

3. Bake 55 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove from pans to wire racks. Cool completely. 3 loaves.
 
Fruit Cake Bread~~~~~much better then the fruitcake xmas bricks
Ingredients:

* 1/2 cup (1 stick) butter or margarine, softened
* 1 cup sugar
* 2 eggs
* 1 teaspoon vanilla extract
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1 cup mashed ripe banana(about 3 medium)
* 1/2 cup chopped maraschino cherries, well drained
* 1 can (11 oz.) mandarin orange segments, well drained
* 1/2 cup chopped dates OR Calimyrna figs
* 1 cup Semi-Sweet Chocolate Chips
* COCOA GLAZE(recipe follows)

Directions:
1. Heat oven to 350°F. Grease two 8x4x4-inch loaf baking pans.

2. Beat butter and sugar in large bowl until light and fluffy. Add eggs and vanilla; beat well. Stir together flour, baking soda and salt; add alternately with mashed banana to butter mixture, blending well. Stir in cherries, orange segments, figs and chocolate chips. Divide batter evenly between prepared pans.

3. Bake 40 to 50 minutes or until golden brown. Cool; remove from pans. Drizzle tops of loaves with COCOA GLAZE. Store tightly wrapped. 2 loaves.

COCOA GLAZE
2 tablespoons butter
2 tablespoons light corn syrup
3 tablespoons water
3 tablespoons Dutch Processed Cocoa
2 teaspoons vanilla extract
1-1/2 cups powdered sugar

Melt butter in small saucepan over low heat; stir in corn syrup. Stir in water and cocoa; cook, stirring constantly, until mixture is smooth and slightly thickened. Remove from heat; stir in vanilla. Gradually stir in powdered sugar, beating to desired consistency.
 
OMG ... I just made a 5-spice pork roast. It came out really well ... perfectly tender and moist. Yummy.

BUT ... more importantly ... I got to use my 'new' knife set! OMG I love the knives! They are the Miracle Blade set. Yes, I bought a set at the fair one year. But seriously ... makes cutting a dream!
