This seems like an obvious incest plot driver and yet it seems to me I've seen it suggested but rarely before.

E.g. A daughter has always lusted after Dad (other options are available!) but never thought there could be any remote possibility of consummating matters... until one day she sees him, purely by chance, across a hotel foyer. He's checking in at reception with a pretty thing on his arm who barely seems older than her.

She's always suspected him of having affairs underneath the nose of his naive wife but never had proof anything like this. Discreetly, she takes a photo with her phone...

I think the problem with your set up is that getting caught with the daughter would be way worse than just cheating on his wife with a younger woman. So the incentive isn’t quite there. Plus if the woman he is currently cheating with is being paid for her time, she might not like being cut off.

Family corporation where everyone is involved to some degree. Niece has a crush on her uncle. She finds out he’s been embezzling. He hid his tracks but she has proof of it saved onto a few places. If she reveals it, family will set upon him with their full fury. He’ll go from living out of penthouses with his supermodel wife to not being able to get a job pushing carts.

However, he becomes her lover/pet/what have you, she’ll keep it a secret. If he gets caught, he’ll definitely be the black sheep but they would probably just reassign him or buy out his shares and ask he never be seen again with them in public.

Maybe it could even be a character motivation: uncle normally tries to present himself as a moral person, above his cutthroat relatives, and niece wants to drag him down into the dirt with her, to show he’s no better than them

The way blackmail as a kink in own right is done around here, it always escalates. Such as, say, it starts with girl photographed secretly in the shower, and eventually end up in public gangbang, ostensibly to prevent said photos from being published.

Same here. He's caught in dubious situation that looks like cheating (not necessarily even is, "I can explain" style), but that's enough to get the teeth in the victim and it goes from there.

Besides, who said the mistress has to be cut off? Daughter may not care, all she wants is to get his dick in herself too, whenever she wants. If that means an occasional threesome with her new best friend, so be it.

That seems like a good scenario in its own right. I have this personal preference for a lesbian incest twist, with it being Mum who's seen in the hotel by daughter. Very hot. I think, taking the OP's original premise, that it would be a good start point for blackmailing any acquaintance or friend but making it a family member certainly adds to the hook.
