I think that is an accurate description of life as I have experienced it.
I don't own a coffee machine either, only a French press for coffee-drinking guests. Water kettle is the item I use daily. And I wouldn't ever use the Instant pot if it was in the basement.I get that, especially with my small kitchen. My air fryer multi-tasks as a toaster/toaster oven. I also do not own a mixer or a microwave, so that helps in the space saving department. Also I don't own a coffee machine as I don't drink coffee (I know, I know). There are some wonderful new multiple application appliances. I once saw one in 1950s red color toater oven with air fryer feature and on top of it were 2 small burners.I don't own a coffee machine either, only a French press for coffee-drinking guests. Microwave I do have (standing over my extra freezer), though if I was designing a minimal kitchen I would choose a oven with microwave function instead of a separate microwave. (This kitchen isn't exactly minimal, but has been designed in the beginning of 80's when they didn't need to think about where to place microwave.)
I don't make much single servings. I cook ordinary 4-person meals usually, and eat more than once from it. So microwave is essential.

I can relate. That feeling come and goes with me. I am going to a New Orleans Style Jazz fundraiser tonight with friends. Maybe I need to get out of this house for awhile. That has been my experience. I used to read a whole lot of different philosophy stuff that called to me. I like Alton brown because he often talks about the science of cooking and I enjoy that aspect.There’s a cooking show host in the US (and elsewhere I imagine) named Alton Brown. Very informative and entertaining, but one thing we like about him is he is not a fan of one-use gadgets. Everything he uses in his kitchen is a multi tasked. That said, our new oven has an air fryer but we haven’t used that yet.
I've never had good intuition. I've moved through life as more of a bull in the china shop. When it doubt, just charge. LOL - it's worked, in it's own way.
