It just seems to me, there are plenty of people here that could delight you in ways using only your natural “equipment” that afterwards you would fall to your knees and thank God you were born a man. I do a dry rub to start, my own perri-perri seasoning blend.
Smoke using apple chips for about 3 hours or so depending on how much I’m doing, to get good smoke but nowhere near fully cooked.
Bring them inside, load them into a roaster pan with venison stock and some water halfway up the ribs, add a touch more of the same seasoning if I think they need it.
Cover, and cook at 275-300 till they’re almost sliding off the bone.
Makes wonderful “pulled bear” sandwiches.
