Chaotic Coffee Klatch (tea also available)

Ok @cascadiabound and @Photog1rl here it is:

Pumpkin Cake

Ingredients:

4 eggs
1 โ…” cup sugar
1 cup vegetable oil
(1) 16 oz. can of pumpkin

Beat together well in the bowl of an electric mixer.

Mix together and add:

2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons pumpkin pie spice (recipe follows)

Beat all ingredients together well. Pour into a 9โ€x13โ€ glass baking dish, smoothing batter out so itโ€™s level. Bake at 350 degrees for 35 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before frosting.


Frosting:

(1) 8 oz. package of cream cheese, at room temperature
1 stick butter, at room temperature
2 teaspoons vanilla
3 ยฝ cups powdered sugar

Combine cream cheese and butter. Add vanilla and blend well.
Add powdered sugar and combine, then mix on medium-high speed for 5 minutes or until light and fluffy.


Pumpkin Pie Spice

5 teaspoons cinnamon
4 teaspoons ground ginger
1 teaspoon allspice
1 teaspoon cloves
1 teaspoon nutmeg
 
(1) 16 oz. can of pumpkin
Can of pumpkin? Not available here, here it's about buying a whole pumpkin from the veggie island (though finding some other sort than butternut squash can be difficult, unless it's right in the harvest season). Is it 100% pumpkin puree, or does it contain other ingredients?

Itโ€™s 100% pumpkin. You could sub the butternut squash by baking it and making your own purรฉe, and it would probably work, as long as it was very well purรฉed and smooth, with as much extra moisture drained off as possible.
