I’m not the best recipe person but I’ll explain what I do.
I chop up 3-4 leaks, 3 cloves of garlic and some celery. Wash it well. Then I add a 1/2 stick of butter to a heavy pan and sauté the leaks, garlic and celery until soft.
Dice 6 or so potatoes, and add them along with 2 bay leaves, some thyme, salt and pepper and two containers(about 7 cups) of stock or bone broth.
Cook until potatoes are soft about 15 mins blend until smooth in pan and then add heavy cream to taste. I use about 3/4 of a cup.
Top with chives and sautéed bacon(if you like bacon)
Serve with a side salad and some crusty bread.
