Here's the basic recipe: Cherry Chocolate Upside Down Cake

For the cherry part:
2 c cherries
1/3 c sugar
1 tsp corn starch
combine and toss together, spread evenly over the bottom of a prepped cake pan (grease and flour 9" round pan, line bottom with parchment paper) note: I used cocoa powder rather than flour on the pan so that there wouldn't be white flour dusting my chocolate cake. Also I used a spring form pan which made it super easy to get out.

For the cake part:
1 c sugar
1 c flour
1/3 c + 1 Tbsp cocoa powder (use the highest quality you have/ can get)
1 t baking soda
1/4 t salt
2 eggs
1/2 c soured milk (just add 1 tsp vinegar or lemon juice to 1/2 c milk - it will sour it immediately)
1/2 c brewed black coffee (I make wicked dark french roast coffee in a french press, so that is what I used)
1/4 c vegetable oil
1/2 t vanilla extract

Combine all of the cake ingredients in a mixing bowl and beat for 2 minutes. Then pour slowly over the cherries.
Bake 350 F 30-35 minutes or until a toothpick comes out clean.
Cool for 5 minutes and then turn out onto a serving plate.

Note: I had a bunch of cherries that I used to make "Cherry Bounce" earlier this year - it is just vodka with sugar and fresh cherries allowed to sit for 6-12 months, then you strain off the whole fruit to get a delicious liquor. I could not bear to toss the extremely boozie cherries (they were my own home grown sour cherries), and so I had been looking for a recipe that I could use them in. So I substituted fresh cherries with these very boozey cherries. To counteract the alchol I doubled the sugar and the corn starch called for in the recipe.

Serving recommendation - serve with freshly whipped cream drizzled with caramel sauce.

And yes, as @LupineOne noted - pretty damn near orgasmic!
