What's cookin', good lookin'? Part II

Yesterday I made:

Shrimp cocktail
Smoked Salmon canapés
Octopus salad (with potatoes, lemon, parsley and olive oil)
Mixed Fried Fish (shrimps, squid rings, fish, squid tufts, anchovies and baccalà)
Spaghetti with sea food (with mussels, lupins, squid tufts, scampi and cherry tomatoes)
Chocolate cake (this is a specialty of my brother as I don't bake)

Tonight I'm keeping it light. Just some bruschetta and panettone.

Sounds great. Love octopus
 
Bread dough doing its thing. Gonna get some freshly baked bread for breakfast tomorrow. :)
 
I've decided to do a 365 days meal prepping challenge. Yes, that's right. I will cook for a whole year in advance. It will take two weeks of cooking according to my calculations.

Did you do this?
 
I'm still in the preparing stage. I've planned a testrun with 48 jars (4 recipes à 12 jars) over a weekend to check the feasibility before ordering 200+ jars.

I've canned only my already planned "regular stuff" during my vacation, like Currywurst and ragù bolognese:

Oh, okay. Somehow I thought you'd go without cooking starting 1 January.

Will be interesting to see how it turns out! Won't you miss cooking during the year, though? You seem to enjoy it a lot.
 
I'm looking at Pakistani recipes to cook for my ABC cooking project.

"Lower the flame and cook for 10 to 12 whistles."

Carrot and ginger soup topped with roasted za'atar chickpeas and rosemary and garlic bread rolls just because I didn't feel like that was enough carbs.
 
French Onion Soup...I've been craving it since Seela mentioned onion soup last week!
 
Italian meatballs filled with mozzarella cheese served with a spicy tomato sauce.


Salad on the side, 'cos we gotta at least serve it up!
 
New Oven Update for Cookie:

I've used it several times for different foods and find I hate that the entire oven needs to be wiped out each time. Pro side of that is it's a small oven. Bacon was a disaster in that regard!

I have been happy to air fry squash and sweet potato fries with good results. I have also baked some chicken successfully.

We attempted airfrying some 1" thick pork chops and had to worry that the dripping grease would catch fire. Adding water to the drip pan resolved that little heart attack but it took a bit to clear the smoke. :eek::eek::eek:

I was rather excited to use the rotisserie feature but now I'm not so gung ho. I'll definitely have to babysit it closely.

When you take out the fry basket, there's no way to set it down without burning something or making a mess especially if it's drippy. We have figured out to have a sheet pan ready to set it on. And oh yeah, I wash dishes by hand as there's no dishwasher in my tiny house so that's one more pan to wash. :rolleyes:

It really puts out a lot of heat to the kitchen on the airfryer mode but for baking/roasting I definitely prefer it over my large oven. There's a lot less heat.

One other weird thing - there is no OFF button. The manufacturer recommends leaving it unplugged when not in use.

That's all I can think of at the moment. I really enjoy having another oven but there is a definite learning curve to use the airfryer.:cattail:
 
I’m prepping some easy oven meals for later so I made quite a bit.

Lasagna with yellow squash mixed in.
Meatloaf with mashed potatoes.
Breakfast burritos - egg and veggie
Cinnamon walnut bread which was a “want” and not a “need.”

This should do for a week mixed with easy meals from the other half. And simple sides like salad.

And now to make tonight’s dinner. ᕦ(ò_óˇ)ᕤ
 
Oven pasta with all sorts of bits and bops I had in the fridge that were close to going bad. Like a bendy parsnip and carrot, kohlrabi, spinach, a few cherry tomatoes, some leftover chunks of cheese. It turned out really good despite my doubts. :)
