What's cookin', good lookin'? Part II

Gua bao. Wish me luck. I'm about 70% certain my steam buns will end up like chewing gum, never made them before.

They turned out great! I still have some pork left so I'm pondering if I should make more buns tomorrow or use up the pork in some other dish. :)

Today I'll make eggnog. I've never had it or seen it, the concept of drinking basically custard seems a little odd. But it's one more method to get alcohol in my tummy, so why not!

I'm not sure yet. Either Tagliatelle with ragù or pilaf with meat and vegetables. We'll see later how I feel.

Tonight we are winging it. I’m not cooking, I’ll be baking all day.

What are you baking?

I made bread and golden beet terrine today. In an ideal world I would have baked the bread a few days ago because it's one of those moist breads that get better after a few days, but I was too tired and lazy. It's a small wonder I managed to get it done at all.

Salmon is curing, I made two types this year. Whitefish is curing too. Herrings are pickled. Mushroom salad is chilling in the fridge. I still don't know what to make for a warm dish of if I'm going to skip it altogether. Our big day is tomorrow, so not much time to figure it out. I might make beet soup. It looks pretty and beets are a big thing in the traditional Christmas table here, so beet soup could be a nice nod in that direction.

Thanks! Putting this on the evergrowing list of recipes to try. :)

No Sahnesteif available here, but I'll make do without.

No Sahnesteif here either, but, to stabilise whipped cream, you can dissolve a teaspoon of unflavoured gelatin in a few teaspoons of water.

Yeah, I've done either that or added a bit of quark or cream cheese to make it sturdier. It changes the flavor a little but I don't mind as I generally really enjoy the slight tang that quark brings into the mix. :)

Xmas Eve here. Boned turkey stuffed with bacon, thyme, cranberry, dates and figs.

Tomorrow, fresh fish- natural and beer batter, smoked salmon and scallops.

I just made 2 batches of cookies, chocolate chip and oatmeal raisin. I made pecan pie. Necro made salted caramel cheesecake.
I had extra pie dough, so I made a broccoli cheddar quiche today for brunch.

We have firsts and lasts on Christmas Eve. I used to make a big dinner, but since I love appetizers, we were always full from that. So, we just go big on apps.
Necro is making wings. I made baked Brie with berry preserves in puff pastry, shrimp, chili dip, a cheese board, an antipasto board... bla bla bla...

Tomorrow we keep it simple: steak, taters and salad.

Sounds tasty!

We had an assortiment of fish, basically. Roe, cured, smoked. Dark malt bread to go with it. Gold beet terrine. Beetroot soup topped with blue cheese and croutons. Cinnamon yogurt dessert with lingonberries, Russian candy and gingerbread crumbs.

Tomorrow's leftover day, although we still have stuff we made for today and didn't take at all. Like the herrings and beet cured salmon. The 26th has traditionally been a pizza day for us, but this year it might be burgers instead. We'll see.

Doing as much as possible today so all I have to do tomorrow is the turkey and sweet potatoes. J wanted a traditional meal for a change.
So our menu is filled with comfort food:

Shrimp cocktail
Turkey
Cornbread Dressing
Sweet potatoes with apples
Pistachio Brussels sprouts
Mashed potatoes and gravy
Cranberry sauce
Pecan pie

Tonight after he gets home we'll have a cocktail and charcuterie and watch Love, Actually and Die Hard.

The bird is done but we are too full from the biscuits and gravy for breakfast to be able to finish side dishes and sit down to eat yet again!

Fri Chik
Buttermilk Biscuits
Mashed potatoes
Turnip Greens
Cheesecake
Toll house cookies
Cheese straws
Artichoke Hearts fried
Donuts

It's the holidays y'all!

:rose:

Yesterday I made:

Shrimp cocktail
Smoked Salmon canapés
Octopus salad (with potatoes, lemon, parsley and olive oil)
Mixed Fried Fish (shrimps, squid rings, fish, squid tufts, anchovies and baccalà)
Spaghetti with sea food (with mussels, lupins, squid tufts, scampi and cherry tomatoes)
Chocolate cake (this is a specialty of my brother as I don't bake)

Tonight I'm keeping it light. Just some bruschetta and panettone.
