Or you could use a lot of similar ideas for the U.S. version, though in Canada, we do it a bit differently- our holiday is the Monday, not a Thursday, so three day weekend, not four, and most people celebrate on Sunday. If you want religious themes, most churches have special harvest related themed services.
First, you need to decide whether to ignore COVID. If you don't, travel themes are good. If you do, something about sadness over missing absent friends or fammily workks. Also Zoom sex (we have a thread).
Students arriving home creates themes. The "turkey dump" breaking up with the high school sweetheart is a tradition. Apparently "forever" when one person goes away to school is less than six weeks. Breakup sex or rebound sex anybody?

A very mature version could involve inviting the elderly neighbour to share the meal.
