"How do they find out about each other" makes more sense, and thereby may answer your question.
"What do you do?"
"I'm a cop. What do you do?" (better if it was "detective")
To wit; the thief is supposed to respond with "I'm a thief"??? Obviously not, and thereby it's the "how does the cop find out?" that makes for a more interesting, naturally played out story, which will probably write itself.
While the current trend is that the man is the thief (of hearts), and the woman is the cop, I'd suggest having the man be the cop, and the woman be the thief. It would allow her to be more interesting as a character, while no one would be too surprised that the man is the fool who falls in love with a thief. Women are also more believably evasive about personal things in their lives. Yet it may trip the triggers that make the cop go "hmm" which makes him dig in and start to uncover what the woman is really about. However, it takes him a while to suspect what's really going on and since then has already gotten into bed with her. He likes her spontaneity and daring behavior. She likes that he is not the kind to take from her, plus there's the excitement of her possibly being caught.
Women are more likely to suspect they are being lied to, which if she is the cop, makes it a shorter journey to "What happens then" but I like a slower build that makes it more believable why the cop has such a moral dilemma of "what happens then?" He is caught flat-footed (no pun intended (okay, I lie)), Instinct screams "Book her, Danno!" but she's not like any woman he's ever met before. She is already set to run, but see's he is caught between love and hate. That causes her to reconsider. That he fights so strongly with his base instincts makes her realize how much he likes her. Instinct screams "Run!" but what are all the sparklies and shinies without someone to share them with? Maybe he is the one she's looked for all her life! Drat that she fell for a cop!
Will he try to make an honest girl of her? (of course) Will she try to tempt him with the riches of Scrooge McDuck? (Natch') But a leopard can't change it's spots. Thereby I suspect it would be a better story with no HEA, but where they go their separate ways with "I'll give you a 30 seconds." Which, again, shouldn't surprise that the man chases after the woman, which delights her to no end.
What kind of thief? Bank robbing and cat burgling are the sexiest forms of larceny.
With how many wealthy women have a shoplifting fetish, that could be a fun direction to play.
