Hi, an amateur here, relatively new to all of this, and doing it for fun.
Although I have just managed to publish another story here on Lit,
I cannot seem to find or settle on a format.

Lot's of critique from people that just comes across as 'put down'.
Luckily I'm thick skinned so I can take it. It's only words.

Easy digestible chunks, not too demanding, too many comma's.
Short and to the point, a 'quick fix' for a generation of low to no
attention individuals.
 
What do you mean by "format"? There is one basic format here--determined by the Web site itself--and that's as it should be. The story file is basically one rolling anthology. There's an overall format in which stories are presented, just like in a printed anthology. And that format is determined by the publisher. In the case of Literotica, it's a very basic format as it has to show well on several different platforms.

I was meaning, is there a certain way for writing short, medium and long stories in here.
I think I might lean toward a magazine style (influenced by erotica of my youth).
Some people are grammar fascist's, where ever comma, adjective and adverb have a strict place.
You may have witnessed this on previous post which you kindly interjected a little wisdom.
I'm honestly just curious.

No, there is no singular style. You'll find readers for long, short, and medium length stories; you'll find readers for mechanical strokers, you'll find readers for long, emotion-drenched kitchen sink dramas, and everything in between. Trying to cater for the "hypothetical reader" is a fool's game, because that person doesn't exist.

Develop your own style, and readers will read it. It's just a matter of figuring out why you're writing, where you fit, who you want as your audience. That takes about a dozen or so submissions, I think - by then you should have a feel for your own style, what you do well, what to avoid. It takes a bit of time to develop that.

Technical competence helps - write well, and the grammar nazis have nothing to say; write badly, and they'll be all over you - it does matter, and you need to get the basics right. Good luck :).

All I can add to that is to keep it as simple as possible, to allow it to be read on a variety of platforms and devices. My preference is to use only italics or bold-face, HTML style, and put full lines between paragraphs.
