Instant Pot Risotto - success.
Pressure is science when it comes to rice, for sure.
I felt like Italian grandmothers might rise from the dead and beat me with their wooden spoons. But instead, I had delicious rice about fifteen minutes after adding it.
Spousal doubt and dismissal was on the ingredient list, but I think I kept it outta the pot.

Husband was at the airport at 8 am. Several delays, he finally got to Chicago.
More freaking delays. Seeing he won’t arrive in Colorado until 3:00am EST, with an hours drive, he wanted to stay in Chicago overnight.
No flights available for tomorrow.
So, it will be a long night. He might get to his hotel around 4 am.
