The Isolated Blurt Thread XLI : The Day The Cat Came Back

A lovely 66.6 mile day on the bicycle with nary a cloud in the sky. The temperature ranged from a cold 48° in the morning to a quite comfortable 71° in the afternoon.

The hours of daylight have decreased enough to become a limiting factor. I don't want to be out there much past 5:30.

The countryside is breathtakingly beautiful. The grass is as green as it is in the summer after rain and the contrast between it, the blue sky, the multi-colored leaves and the brown of the as yet unharvested corn is amazing.

tonight, my cat got into a fight with a large, fluffy, white cat who was wearing a jacket. i probably would have fought as well.

I'm shocked no one mentioned bacon.

C'mon people.

Well, since you brought it up, I smoked a tenderloin last weekend as a dry run for a holiday party we are having in December. Kosher salt and fresh cracked pepper, wrapped in bacon, and hickory and oak smoked. (Think of it as poor man's beef wellington without the mushrooms, pate, prosciutto, and pastry). It turned out pretty well, although next time I'm going to up the seasoning. I've read about a sage sausage and bacon wrapped version that I may try next. Saved the chain to make burgers with.

Ktty girl is being a butthead. She's scratching at the box springs to get my attention. She wants to go outside but that's not for another hour when it's light enough outside.

Never salt anything you are going to smoke!!!! The salt pulls the moisture out.

this mayan chocolate yogurt is weird. it tastes like shit if i eat full spoonful, but in smaller doses it's quite nice. i find this very confusing.

That is my understanding as well. Similar reasoning why you add the sauce after you smoke.

I don't know what the reason is for that but have you ever noticed that if you eat one kernel of popcorn it does not taste as good as a mouth full of popcorn?

I should've consulted you last year on this. Unplanned jerky.

Speaking of consulting with Mr. Savage what did you think about his admonition about all these little fuck fuck games you've been playing and I've been rising to?

I've been giving it some thought and I think he has a point. What do you think, "Fagman?"

Everything was fine until she opened her mouth.

I agree that salt draws moisture out, but that doesn't necessarily exclude smoking.

Bacon and all the other salt-cured smoked meats are examples of the opposite, not to mention the countless salt/sugar rubs in the barbecue world. I'd say a lack of marbling and fat would be a bigger reason to avoid smoking a tenderloin.
