First 2 hours were at 200°F, then 4.5 hours at 225°F. Sauced at 45 minutes before taking the ribs off.

Just used lump charcoal (Royal Oak). I don't use briquets in my AKORN as they generally produce a lot of ash.

I know EMS filed under Chapter 11 of the Bankruptcy Code a couple of years ago. I'm amazed they reorganized rather than liquidating.
