Not to get to in the weeds of, "Is the way you perceive blue tge same as the way I do..." but, I suspect that pheremones and their role in chemical attraction plays a part. When the differing biochemistry, as you point out, is registered by the senses, those we are compatible with smell/taste/look/sound great.
