What's cookin', good lookin'? Part II

Tonight, I'm making congee with chicken, scallions, and mushrooms. I wanted something cozy, and it doesn't get much cozier than congee.

right? congee's awesome!

Congee is quite yummy. :) I like brown rice with miso the most. It is so comforting and it's something I really like to have when I am under the weather.
 
Ah, congee. I was very skeptical of it for a long time, but now I (usually) love it. :heart: I'm gonna have ramen soup with broccoli, tofu and edamame today.


I had the cooking club thing yesterday and we made a blueberry pie, per their request. I told them to grate some lemon zest on top of the berries, and OMG their faces. They were completely lost and very hesitant, glancing at each other.

"You're bullshitting us, right? This is some kind of a joke."

They had never heard of using lemon zest and found the concept very puzzling. But they did use it in the end. :D
 
Weather is unseasonably nice today so I'm smoking a pork butt for pulled pork. Really wishing the weather would stay this way.
 
Special occasion meal tonight. We have been meaning to have a nice dinner for some time now and for the first time in weeks he has time off. I originally suggested cooking at home and he originally wanted to go out so that I wouldn't have to cook. He decided cooking at home would be more economical so we spent a little on a nice steak and I'm making a steakhouse style meal with creamy mashed potatoes and fresh steamed asparagus. For dessert we're having tofu pudding and later we will air pop some popcorn (drizzled with olive oil and seasoned with salt and pepper) for a movie. Perfect low cost date night. ;)

Any chance for a recipe or at least pointers for a tofu pudding? I've only ever used tofu in savory.

I was skeptical about the "pudding" but gave it a try one day and ended up eating a whole block of tofu by myself like this. That day I didn't tell Mister about it because I ate his portion. :eek:

Here's the recipe I used. This is a quick version but there is a more involved version that results in a very pretty presentation. I didn't have soft tofu so mine came out a little lumpy but the flavor is still good. Be warned, it still has tofu flavor so if you need it masked you might want to make it chocolate or more strongly flavored. Vanilla and almond extracts taste great in it.

Tonights dinner

Well I saw so many people talking about risotto and couldn't resist making one myself so I had a mushroom sweet pea risotto, steak and asparagus with a lemon butter sauce.

I'm gonna make mushroom soup with porcini, chanterelles and trumpets of the dead and top it with a poached egg and chives. I had such a dish when we were in Paris in November and it was really good, I've been wanting to make it ever since. Today's the day!

Curried carrot, sweet potato and ginger soup with a side of chopped tomato cucumber salad and baguette.
