Hey all you vegetarians

We were cavemen up until a few years ago. We threw rocks at furry things and ate the unlucky ones that got hit with the rocks.

There were no soy woolly mammoth.
 
I really like sweet potato/black bean burgers. I'll see if I can find my written recipe.

Are you eating seafood or giving that up as well?
 
Another cRty forward, the day after moe marinieres I always make leek soup with left over wine and mussel juices. It's somehow perfect.

Oh, that sounds so good. And it reminded me: potato leek soup is a great quick and easy vegetarian meal.

Chop potatoes, rinse and chop leeks, simmer in veggie broth until soft. Add cream if desired. Voila!

I am a food whore. I haven't given up anything. I am just trying to find tasty replacement for meat or seafood. The best I can do right now is moderation.
 
I ate a ridiculous amount of beef brisket a few weeks ago that took around 13 hours to smoke.

There is no way that I would ever become vegan.
 
I hate meat replacements other than Morningstar maple sausage and Morningstar meatless crumbles. Otherwise all of the other replacements taste like plastic.

I roast a lot of veggies, root veggies roasted and thrown in pasta with some brown butter and sage, roasted veggies simmered in some stock, a little cream and blended...especially with a large crouton in it...Lordy.

What else...butternut squash lasagna, taco bake using your favorite beans, sauteed veggies, eggs, maybe some hash browns, sriracha and other hot sauces, wrapped in tortillas...amazing juevos rancheros.

I do recommend trying to marinate firm tofu in your favorite sauce or spice and stir frying it. Tofu is tasteless without spice and/or sauce.

Master your own pho, rice or egg noodles, a flavorful broth, bean sprouts, a squeeze of lime, maybe some small chunks of sautéed mushrooms, and I recommend sautéed onions and peppers in there too.

Master alfredo sauce and broccoli.

Get a spiralizer and do zucchini noodles and marinara.

Orzo and mushrooms, plenty of Parmesan cheese and black pepper.

Me either. I will not consider giving up cheese. Or meat for that matter. I am just looking for options.

I try to eat meatless once a week but I'm getting tired of the things I always make.
 
I've yet to find fake meat that makes the cut, so to speak. There's always something... off about it.

However, I once tried to make a quorn goulash. Didn't like it, on account of the quorn. So I said fuck it, and did a new batch. Same thing, sans quorn. Turned out spendidly, and I didn't miss the beef at all.

The key was fake beef broth, which does work well as a beef stock replacement, a can of black beans and extra onions instead of the meat.
 
I'm also fond of cutting random plants into chunks, throw them in a pan, slather them with olive oil, olives, pine nuts, chopped garlic and ground black pepper, shove it in the oven until the top bits are singed, and then serve with a minor mountain of grated parmessan on top.
 

Thanks for the explanation of dal. Apparently I have been into it for years and didn't know. I love lentils and one of my favorites is 15 bean soup.

No I don't pick out 15 beans. I can find that premixed at the grocery store. It's not premade soup but all the beans in one bag. The rest is up to you.

There used to be a company called 'Bean Cuisine' that had all the spices and beans to make a great pot of soup. I used to use add water and the broth wold come out so delicious. What brand did you use?

Wings. I so want to eat with you. You are so in the ballpark of what sounds good to me. I love the Morningstar sausage. Actually Morningstar makes lots of things I like but when I read all the chemicals that they use to make it taste like meat it turns me off.

Flavorful broth is wonderful.

Where I live it is not a specialty item. It doesn't come in a pretty bag. If you go to the dried bean section of the store it is always there. It comes with ham spice flavor packet . I don't remember the name.

Yeppers, It's a great meal all by itself. I have friends asking me to make it all the time. I don't like to tell them that all I did was put some beans in the crock pot and added some onions and garlic.

As I think of more meals I create I can jot them down here. My family is NOT vegetarian, but I find they don't care if a meal is missing meat once in awhile if it's super flavorful. That's the thing with going meatless, the actual taste of everything else has to be top notch.
