Technically, I'm not actually in the following pics (just my hand that was covered in the dry rub), but below is 10 lbs. of pork belly that I cured, cold smoked for 8 hours and turned into delicious bacon. I gave away a lot of it as gifts to family and friends. And, yes, it was fucking amazing!

For those who don't know, to cold smoke, you just run a long stove pipe from a fire that's burning hard wood (in this case, red oak). I do this in the winter, so that by the time the smoke hits the pork belly or tenderloin (to make Irish bacon), it's not hot and does not cook the meat, only flavors it.

Just replaced the firebox in my wood furnace today and going to recycle the old one into a smoker. The construction of it lends itself to that quite easily, fire below and smoke travels through a box above, all I have to do is cut out a door to access the top section.
