I was thinking chocolate pudding, made from bananas and avocado. With cocoa and a splash of vanilla. Shockingly tasty. :eek:

And pretty darn healthy to boot! :)

Ummm... and just how do you make chocolate pudding from bananas and avocado? :confused: I think another recipe posting is in order...

1 large banana
1 small/medium avocado
1/4 - 1/3 cup coconut milk or almond milk
4T cocoa
1 tsp vanlla
1/2 tsp sea salt

Put all in food processor and mix until smooth. Pop it in the fridge for a bit to chill. The consistency is amazingly like actual pudding. If desired you can whip some cream and put it on top.

Quick, easy, and pretty darn healthy! :)

No, seriously, it's one of the things I make when my sweet tooth calls. The other is sugar free, grain free chocolate chip cookies! :p But the pudding is easier.

FYI. Some recipes add a little sugar to the pudding. :)

The pudding recipe sounds interesting.
It's hard to get good avocados here sometimes and not always easy to see if they're ok, so I often end up buying way more than I need just in case.
I think the kids will like this way of using the ones that don't end up in the guacamole, when the avocados turn out to be better than I thought.
 
Where are all the people who promised to come for some cake? The cake once again turned out huge, so guests are more than welcome. It's my signature lobsided design and with the cream just splattered on and the whole thing looks like a messy blob, but it tastes pretty good.

(Edit: I think this should go to the dessert thread, but I hate being the only one who posts there, it makes me feel like I'm the only one eating desserts while eveyone else is super healthy. :eek:)

I've tried before the chocolate mousse EN gave the recipe for. It didn't quite work for me. I don't know if the avocado wasn't ripe enough or if it was too big or what, but the mousse just had a very avocado-y taste and wasn't very pleasant. The second time I added a bit more banana and a bit less avocado and the result was much better! :)

I'd be interested in the chocolate chip cookies you mentioned if you don't mind sharing the recipe.

The banana and avocado need to ripe for sure. Not necessarily overripe, but not hard in any way or the pudding won't be sweet enough or have the right texture. As avocados and bananas don't come in standard sizes you may have to tweak the milk addition as well. You can also add a bit of cinnamon, or cayenne, if you're from Texas. ;)

I'll post the chocolate chip recipe this evening (I can't remember it off the top of my head). It's similar to the pudding recipe in that it's not quite as sweet as the real deal, but the overall consistency and taste do satisfy the cravings! :)

The chocolate and orange ice cream I can describe. I made nougat sauce to go with that though but it's the nordic version of nougat, the brown fudgy one you buy from Odense and not the white crunchy french one.
Is it called praline?

You mean the dark layer of Marabou Dubbel Nougat type of nougat, right? I have wondered about what to call that in English, too. I have always thought praline is either the hard stuff you get when you melt sugar and add nuts, or then the single pieces of confectionery. I think I've always explained it as brown nougat that's smooth, but there's probably a real name to it.

Edit: Amazon.co.uk says Dubbel Nougat bars are" layered nut and almond praline bars". So maybe it is praline then?

Yes, that's the one.
If you imagine melting Dubbelnougat in cream and spicing it with a little bit of orange zest, you have the sauce from this week end.
For those not familiar with Swedish chocolate bars, you can think of it as the stuff inside those Belgian sea fruit shaped chocolates.

Sorry for the recipe delay. Super busy at the moment. :(

This is basically what I do. Paleo Choc Chip Cookies

They give you a few options for ingredients. I use butter, substitute organic applesauce for the honey, and use 80% dark chocolate bars with no added sweetening. On the extreme no sugar end, but I really try to eat sugar free. The applesauce results in a slightly chewier cookie, and the 80% dark a less sweet cookie.

Good stuff. They never fail to make me think I'm having something I shouldn't. :D

I'm still confused on the nougat - will have to read up. I don't think of praline as being "fudgy" in any way.
 
40+ pancakes in 3 flavors yesterday, because husband expressed a wish to take them on the road. He ate 15 before he even got going. My feet still hurt.

I have a question. How do you call fried meat rolled in flour, eggs and bread crumbs? Like Wiener Schnitzel? Cordon bleu is with filling but what about just meat? I do chicken that way for him a lot and I never found a word for that in English.

I would call that "breading" or "country fried".

Names for cooking style vary widely here, depending on where you live. I was raised thinking -

Chicken fried = egg + flour
Country fried = egg + breadcrumbs

I have no doubt you'll get several different answers. :)

Marinated and broiled steak kabobs, Greek salad of greens, onions, tomato, and feta and simple steamy hot buttered rice.

Chocolate covered almond ice cream nuggets and fresh strawberries for dessert.
 
I just sat down to a dinner of fried chicken, spaghetti, salad, and fried zucchini.

Don't ask. I have no idea. It just sounded like a good idea at the time. :p
 
A good friend commented last weekend that his garden is so overflowing with tomatoes, that he's just letting them rot on the vine. So I told him that if he'd contribute the tomatoes and herbs, I'd can spaghetti sauce for him. So I came home with 6 gallon ziplock bags of perfectly ripe organic tomatoes, 1 gallon ziplock bag of fresh basil (2 varieties) and oregano, and (just because) a 1/2 dozen Poblano peppers.

I spent this morning making a roasted Poblano pepper & Sweet corn chowder, and this afternoon canning spaghetti sauce... it's amazing how that many tomatoes only made 5 pints of sauce.

The sauce was good, but the chowder was amazing.

Okay, I made up the name myself, as I try to make it with black forest ham. This time plain smoked ham though, even my kitchen runs out of meat specialties sometimes.

The layers:
Ciabatta bread (whole wheat)
Egg butter with cress, seasoned very well with salt, white and cayenne pepper
Smoked ham
Mozzarella
Radish
Cress
Argan oil (not visible) - if this is outside your budget, any oil with an intense nutty taste will do.

Braised lamb shoulder with roasted carrots and potatoes, shredded and served open faced sandwich style on fresh baked bread spread with roasted garlic paste, salad, paleo pound cake with honey and red wine macerated raspberries, and a white chocolate cheesecake chilling in the fridge. And the rest of the red wine :D It's good to know a chef that needs to test recipes... :)
