Prickly Pear

Ok cooks..... I have cooked with prickly pear fruit before, but now I find that the cactus paddles are actually edible too.
So, I have googled some recipes, but I just saw a chef on tv making a kind of salsa with the raw cactus flesh and can't find the recipe.
Anyone have this?
Any other recipes welcome too
