Smoked aged almost any kind of cheese. You can't go wrong. Specifically for me gouda or swiss

Roux. If you see a recipe that calls for flour and butter, ignore the add butter first and then add roux and just make a roux.

Basically you melt a pound of butter in a pan and add a pound of flour. mix until it looks like instant mashed potatoes. Want your soup thicker, add more roux. Want it thinner add less roux.

Cheese will thicken it too. You can always add more roux at the end of it all.

Yes, I've seen recipes along those lines- is there a specific one you favor? Both times I tried it I ended up with something closer to paste than soup.
