Okay you guys and gals in colder climes, here's a good one for you.
Go to your local Butcher or Grocery Store and talk to the Butcher. Get the toughest chunk of Roast he or she has. (We're talking the piece he would toss to his neighbors dog when he got pissed at it.) Try to get one without too much fat in it.
As you are buying this chunk of meat you also need to pick up a couple of other things.
A bag of Mixed Stewing Veggies. (I like them with plenty of Pearl Onions but that's just me.)
1 can Cream of Mushroom Soup.
1 Package of Lipton Onion Soup. (Or other dried Onion Soup.)
On the morning you want o have the Pot Roast toss the meat into your Crock Pot. Add the dried soup and the Cream of Mushroom Soup. Also add 1 can's worth of water. Cover the Crock and turn it on low before walking away for the day. (I do this when I have to go to work.) Let it slow cook for 10-12 hours covered and undisturbed.
Ladel out some of the gravy and put this in a pot on the stove. Heat until it is just at the boiling point and add the frozen veggies. Cook the veggies, stirring constantly until the Gravy comes to a boil again. Turn off the heat and return the Gravy with the Veggies to the crock pot.
Remove the meat from the Crock Pot and slice into slabs. (It should be just about falling apart. I find that using two slotted spoons to remove the meat from the pot works best.)
Serve the Meat with any sides you like. I usually ladel the gravy right out of the Crock Pot and over the meat.
