I stole part of this from the Jamaicans so sue me.

Take a couple of nice Skirt Steaks and place them in a large, (Gallon sized) Freezer Bag. To this add enough Jerk Sauce to cover the meat. (I use a home made sauce but you can buy it in some stores. I like mine better for the flavor.) Close the bag and set it in the fridge for roughly 24 hours.

Grill the meat for at least four minutes per side over high heat. Let sit for a couple of minutes then cut across the grain and serve. I like to serve it with Sweat Rolls and Red Stripe.

I want the recipe for the jerk sauce, cat!

When I was in Kingston about a million years ago, the jerk meat at the local stand was served up with some second sauce that looked like muddy water with weeds floating in it. it was sooo damn good, and I have no idea what was in it...
 
Really. After I got back from Jamaica way back when I looked into marketing the jerk seasoning. Turns out I was too late...so I'll take your recipe as well and give fair dues at the cookouts!

1/2 cup Pimiento Berries. (Allspice) (Or one full Table Spoon Ground AllSpice)
1/2 cup packed Brown Sugar.
10 cloves Garlic
4-6 Scotch Bonnet Peppers
1 Tablespoon Ground Thyme or 2 Tablespoons fresh Thyme
2 bunches of Scallions, chopped
1 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
2 Tablespoons Soy Sauce
1 jigger Dark Rum
1/2 a peeled Lemon

Toss all of this in a Blender and blend until fine.

It will last forever in a closed jar in th fridge.

If you want it a bit sweeter then add more Brown Sugar.

If you want it a bit milder then use Jalapenos.

Warning. When you blend this it comes out looking truly nasty. It's thick and it's black. (It reminds my father of Nitro that has become unstable.)
