I kind of feel bad for my LPO now. Not only did he yesterday get word that he's got me for only two more weeks, but apparently yesterday afternoon word came in that the guy who would have picked up the slack in my absence is now going to be leaving the Navy for medical reasons. This leaves him with a group of people [5 women, 1 guy] that have shown less than stellar performances. One of whom he desperately wants to get out of the shop, the other four have little to no motivation, and I believe one of the girls is currently trying to get out on a hardship discharge. To make matters worse, odds are that if he gets replacements for us, they're either going to be pregnant or in recovery from serious injuries.

Snickerdoodles are my favorites because just saying the word makes me smile. And they smell sooo heavenly.

Dammit. I could go for some of those too, but I won't be getting any anytime soon :(

I need to stop watching the movie Redbelt every time it is on. It gets me so aggravated watching him get screwed over like that.

A cookie (biscuit for you brits) made with baking soda and flour, then the dough is rolled in a mix of cinnamon and sugar before baking. Think a kind of sweet fluffy short bread with cinnamon and sugar all over.

I'll make it easy for ya ;)

INGREDIENTS:
1/2 cup (60g) unsalted butter, at room temperature
3/4 cup granulated sugar, plus 2 tablespoons
1 large egg
1 tablespoon milk
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon cream of tartar
1/4 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon cinnamon

DIRECTIONS:

* In a mixing bowl, cream butter and 3/4 cup granulated sugar until smooth. Add egg, milk, and vanilla and blend.
* In a separate bowl, mix flour, cream of tartar, baking soda, and salt. Add to the creamed mixture. Cover bowl with plastic wrap and refrigerate for at least 1 hour until dough is firm enough to handle.
* Heat oven to 375° F (190° C).
* On a plate, mix 2 tablespoons of sugar with cinnamon. Scoop and roll the dough into 1 1/2-inch balls; then roll in cinnamon sugar to coat all sides. Arrange sugar-coated balls on un-greased cookie sheets, spacing 2 1/2 inches apart.
* Bake until edges of cookies are firm to the touch, about 12 minutes. (Do not over-bake.) Using a spatula, transfer cookies to a rack and let cool.

Aw, thanks. Bleargh, vanilla extract. Any idea whether it's possible to use vanilla sugar instead?

And what is cream of tartar, exactly? I hadn't heard that one before.

Yeah the vanilla is just for flavor so vanilla sugar would work no problem.

Cream of tartar reacts with either the baking soda or something to make them fluffy and puffy. If you like them crispier and not so chewy, you can leave it out.
