Thought you all should know about it. It was a lovely soft taco with cheese and tomato and lettuces, also some guacamole and ground beef with the taco seasonings.

Overall, for home cooking I'd give it a 5 out of ten since it's microwaved leftovers.

If I were really energetic and had the money I might have whipped up a special lunch ranging from 8.7 to ten but it's cloudy out and chilly.

A nice chicken soup with veggies would have been nice.
 
Colombian Chicken Soup. Do it.

2 pounds chicken, skin removed, rinsed well
1 large white onion, peeled and cut into quarters
1 leek (white and light green parts only), cut into 1 inch rings, and rinsed thoroughly
1 green bell pepper, seeded and cut into 1-inch pieces (optional)
fresh corn, about two cups
2 ribs celery, cut into 1 inch pieces
2 large carrots, peeled and cut into 1 inch cubes
2 lbs of potatoes - gold, red, and or Idaho - peeled and cut into 1-inch cubes
6 cloves of garlic, peeled
1/2 cup fresh cilantro leaves
2 chicken bouillion cubes (although if you make your own stock, it's better)
1 Tbsp of kosher salt; more to taste
1/2 teas of ground pepper

Aji Ingredients:

4 scallions (white and light green parts only)
1 medium tomato, peeled and seeded
1 small white onion, peeled
2 fresh Scotch bonnet or habanero chiles or 2 fresh hot red chiles, stems and seeds removed (wear gloves, do NOT touch your eyes!)
3 Tbsp fresh cilantro leaves
3 Tbsp white vinegar
1/4 teaspoon of kosher salt

Garnish: sour cream, cilantro


1 Put the chicken in a large (at least 8 quart) stock pot and add 8 cups of water. Bring to a boil over high heat and then reduce the heat to a vigorous simmer. Simmer for 10 minutes, frequently skimming off the foam that floats to the surface. Or you could just throw some kosher salt in there and be good.

2 Add all the vegetables, the garlic, the cilantro, and the bouillon cubes to the pot, along with the salt and pepper (if you're using buollion, otherwise use eight cups stock). Stir a few times to distribute the vegetables and submerge as many of the solids as possible. When the broth returns to a boil, lower the heat, partially cover the pot, and simmer, stirring once or twice for 1 1/2 hours. Taste for salt and add more if needed.

4 Pulse all the aji ingredients in a food processor until they're finely minced. Transfer to a serving bowl.

5 Serve the soup with the aji, sour cream, and cilantro in separate bowls. Let people add garnishes to their own servings.

Ehhh, I've never been a fan of cooking soups like this. The key to a good soup or gravy is in the stock. Buy yourself a chicken and throw in all the bones, gizzards and any other parts in a pot of water with the dark meat and a few vegis for flavor. After the meat gets to the point where you can simply pick it off the bones, remove the meat and keep boiling for a couple hours (helps if you do it in the morning and go about your business). When it's done, scoop out the fat. It makes some of the most delicious soup or gravy you can get your hands on.
 
I just had a vita brownie (high fiber low cal ,vitamin infused) with a scoop of chocolate frozen yogurt and a little chocolate syrup.

It was freaking awesome.
Normally I'm not the kind of chocoholic who can stand super sweet stuff, so this was definitely sweet, but not like root canal, four alarm heartburn sweet.

It definitely hit the spot.

The brownie is 100 cal, the yogurt was half a portion at 50 cal, and the syrup is about 100cal.

All told not bad me thinks.
