Spinach Stuffed Salmon Fillets

4 salmon fillets (about 5 oz each)
pinch salt
pinch freshly ground black pepper
1 package (10 oz) baby spinach, coursely chopped
2 tablespoons prepared pesto
1 tablespoon chopped dry packed sun dried tomatos
1 tablespoon pine nuts

Heat the oven to 400 degrees. Make a slit two thirds of the way through the center of each fillet making sure not to cut all the way through. Season each fillet with the salt and pepper. In a bowl, combine the spinach, pesto tomatos, and pine nuts. Spoon 1/3 cup of the mixture into each slit.

Arrange the fillets on a broiler pan coated with cooking spray. Raost for 8-10 minutes or until the spinach mixture is heated through.

Serves 4.

Per serving: 329 calories, 32 g protein, 4 g carbs, 20 g fat, 4 g saturated fat, 213 mg sodium, 86 mg cholesterol, 3 g fiber.
 
Improvise. A recipe doesn't have to be done step by step exactly the way it's written.

Do you have a cookie sheet with holes in it? Or anything oven safe with holes in it would work. Or you can just use a regular pan and wing it too.

I have a pan. How long would it need to cook? I'm not much of a cook...
 
ahhh, a broiler PAN...I got confused, thought she meant the actual broiler element in the stove.:eek:

theres no broiler in my stove. they don't have them in stoves in these apartments...I think it's too much of a fire risk or something.
