I need an original, delicious, out-of-this-world food idea to take to the annual Superbowl party. Usually I bring chili-cause there's like a chili contest, but I want to bring something completely different. I thought maybe I'd fill up my beloved crock-pot with homemade hotwings, but that's not unique enough.

Anyone have any ideas or suggestions? I'm running out of time.

Hey, hon! I'm scurrying around trying to get ready for my trip, otherwise I'd gladly start digging through recipes.

However, Food Network has a whole section of Super Bowl party ideas. I'm sure you could find something unique there. Looks like there's LOTS of yummy stuff. I'm going to look through them myself when I get a chance.

Beer Cheese Super Bowl Cupcake Recipe

1 cup beer
1 stick, plus 1 tb, unsalted butter
1 cup grated cheddar
2 cups dark brown sugar
3/4 cup sour cream
2 eggs
1 tb vanilla extract
2 cups flour
2 1/2 tsp baking soda
Combine the beer and the butter, chopped into 1-inch chunks, in a large sauce pan, and heat to melt the butter. Add cheddar. Remove from heat, and whisk in the sugar. In a bowl, whisk the sour cream with the eggs and vanilla, then add to the beer mixture. Sift together the flour and baking soda, and fold into the batter. Pour into cupcake wrappers and bake for 25 minutes, or until inserted cake tester comes out clean.

Makes 18 cupcakes.


Bacon Cheddar Cream Cheese Frosting Recipe

1 8oz package cream cheese
1/4 cup butter
4 cups powdered sugar
3/4 cup grated cheddar
1 cup bacon bits
Make sure cream cheese and butter are are room temperature and beat them until creamy. Add grated cheddar. Slowly mix in powdered sugar. Stir in bacon bits.

Football Cupcake Toppers

It's a chocolate covered almond with white decorator gel on it.

I'm experimenting...

Crockpot Pork Chop Supper

6 pork loin chops, 1/2 inch thick
Pan searing flour
Fresh ground pepper
4 cups baby creamer potatoes, cut in half
1 10.75 oz can condensed cream of mushroom soup
1 small onion, thinly sliced
1 medium sweet and tart apple peeled and sliced*
2 tablespoons cider vinegar*
1/4 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon Worcestershire sauce
2 tablespoons Gold Medal all-purpose flour
1 10oz pkg frozen green peas, rinsed and drained

Spray 10-inch nonstick skillet with cooking spray; heat over medium-high heat. Lightly coat pork with searing flour and pepper, cook pork in skillet, turning once, until brown. Place potatoes in 3 1/2 to 6 quart slow cooker. Mix soup, vinegar, cumin, Worcestershire sauce and flour, add water if too thick; spoon half of soup mixture over potatoes. Place pork on potatoes, cover with sliced apple, then the onion, finally, the remaining soup mixture. Cover and cook on low heat setting 6 to 7 hours or until pork is tender. Remove pork; keep warm. Stir pimientos and peas into slow cooker. Cover and cook on low heat setting about 15 minutes or until peas are tender. Serve.

Also... for you WW people, this recipe is 6 points per serving. :)


* Apple and vinegar can be substituted with 2 T. dry white wine

HA! I told you so...stuff as many as you can in your suitcases, because you won't find them in your area!

PS...the coconut glazed kind are super yummy too!

Cranberry Muffins

I'm really struggling to find a simple recipe yielding good results. Has anyone here tried making them, and might you recommend a recipe? Pretty please? :)

I have a recipe for cranberry fruit bread that I used for muffins. But I am sorry to say all my cookbooks and personal recipes are in storage. Have you looked at Joy of Cooking? Their recipes are pretty basic with good results. And look at fruit bread recipes as well. Good luck!

I've searched several recipes online but they didn't get good reviews. I'm going to hold out a little longer and see if anyone here can recommend something they've tried themselves :) I'm concerned that the fruit bread recipes wont allow for the tartness the cranberries will contribute. The Cranberry Fruit Bread sounds yummy though! Bet it would be yummy, toasted... *salivating*

It is yummy toasted with butter! I made very good muffins with my Cranberry Fruit Bread recipe. I will be going to my storage unit this week to look for something else, if I find the recipe, I will send it to you. But I hope you will find something before then!

Cranberry Cornmeal Muffins

Makes 16 large muffins

3 large eggs
1-2/3 cups vegetable oil
1-2/3 cups buttermilk
1/4 cup honey
1/2 cup cornmeal
1 tablespoon lemon zest or orange zest
4-1/2 cups all-purpose flour
1 cup sugar
1-1/2 tablespoons baking powder
1-1/4 teaspoons baking soda
1-1/4 teaspoons salt
1-1/2 cups fresh or frozen or dried cranberries

Topping
1/2 cup cornmeal
1/2 cup brown sugar
2 tablespoons unsalted butter, melted

Preheat oven to 350F.

Prepare muffin tins with cooking spray. Mix together cornmeal, brown sugar and butter for topping. Set aside.

In large mixing bowl stir together dry ingredients. In separate bowl mix together wet ingredients. Add wet ingredients to dry mixture and fold together until moistened. Do not overwork.

Gently fold berries into batter and fill prepared muffin tins three-quarters full. Sprinkle topping over each muffin and bake 20-25 minutes or until tester comes out clean.
