While Zen to me in the kitchen involves those unique ingredients like truffles and saffron, I can't say I have made a pizza with either. Best of luck is all I can wish. :kiss:

I liked this one, but I should point out that I've probably never had the authentic thing.
 
I need a cookie recipe without shortening, but with oatmeal and raisins... no chocolate either... butter's fine, but no shortening...

anyone?

Butter can usually be substituted for shortening in the same amounts.

This is my absolute favorite

1 1/2 cups old fashioned oats
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (one stick), plus three tablespoons unsalted butter at room temperature
1/2 cup packed DARK brown sugar
1 large egg
1 tablespoon milk
1 teaspoon vanilla extract
1 cup raisins
1 cup coarsely chopped walnuts (optional)

1. Heat oven to 350F
2. Combine Oats, flour, baking soda, baking powder and salt in a bowl. Mix together and set aside.
3. In a seperate bowl, cream together butter with both sugars until fluffy and smooth. Add egg, milk and vanilla and blend until smooth. Stir in oat mixture, raisins and walnuts and mix until just combined. DO NOT OVER MIX.
4. Using an individual 1/4 cup measure or a 2-ounce ice cream scoop, scoop level measures of dough onto ungreased cookie sheets, spacing them about 3 inches apart. Bake until edges of cookies are golden brown, about 15 minutes.
5. After removing cookies from the oven, let them sit for 1 minute. Then use a spatula to transfer cookies to a rack and let cool.

This makes about 14 cookies. The dough can be used immediately, covered with plastic wrap and refrigerated for up to five days or frozen for up to three months. Thaw before baking.

Sounds delicious. I'll just substitute choc chips for the raisons and it'll be perfect. ;)
