What Are You Thinking? Continued 14

Why am I doing what I explicitly promised myself I wouldn't do? I suppose it's because I am part of the common, vulgar, weak, licentious crowd.

If you can make mayonnaise with hard boiled eggs, why can’t you make hollandaise sauce with hard boiled egg yolks?
I’ve been wondering about this for a few weeks. I love hollandaise sauce but I can’t get pasteurized eggs anymore.

Salmonella sits on the eggshell, so if you want to be sure of not getting your sauce contaminated, you could give the whole egg a quick boil.
- just lay them down in boiling water for a minute.
And then immediately dip them in ice water.

That should make it safe to make anything you need with raw yolks.

Good advice. I’ll try it if the hard boiled eggs yolks don’t work.

Most people try peel bananas at the wrong end. If you squeeze the very top of the soft end, it’s so much easier. And in fact you can do it with one hand.

Foot note. It’s still hard to do it with your feet.

PS If you lay on your arm so it goes to sleep. It feels like someone else is doing it.

It's much more rare now, but some eggs are contaminated inside with salmonella. In those cases the bacteria gets into the eggs while they are developing in the bird. Always cook eggs fully is still the general recommendation.
