That homemade stuff will spoil you! That's true for a lot of fruit based products. We put up over fifteen gallons of berries and cherries this summer. It was a crap year for apples, or we would have had another 5 gallons of fruit.
I dont know how to can... and to be honest sort of scares me.... we had a thing here where someone brought potato salad to a church picnic and gave a whole bunch of people botulism.... a whole bunch of them died and one was my patient in the er...it was awful

WOW!!! It was canned potato salad???

Fruit stuff made into jelly is pretty safe. Sugar is a preservative too. Still have to be careful, tho.
We do freezer jam, so even safer. I think the freezer jam has a better flavor anyway. Less cook time so more of the fruit flavor is saved. Although I prefer canned blackberry jelly. They have a lot of seeds otherwise.

It has been 20 years... I think was just potatoes. All I know is the depth of health traced it back and tested it and bingo bango botulism.

We had something similar many years ago. Wedding reception. Whomever made the dinner had cooked ahead a huge batch of beef stroganoff using the industrial type kitchen on site. (school cafeteria kitchen maybe?)
They stored the food in the fridge overnight then reheated the next day.
Yeah - they put the big vat in the fridge. So the top and edges cooled but the middle was still piping hot. Everything curdled and spoiled.

lesson: cool in small batches so it cools all the way through

Not too bad. Just have to have a fine meshe strainer and a silicone spatula
 
I’ve had a couple of busy days at work, coupled with a drunken mosh fest with some of my neighbors.

Just checking in here I’ll go back a few pages and try to catch up as much as I can.

Hope everyone had a good end of the week and has a good weekend planned.

We will be rounding and splitting firewood tomorrow. A memorial service for my mom on Sunday.
 
I love blackberries
Me too. We picked almost 10 gallons this year. Only cleaned up 1/4 of what was there. Did 8 gallons by myself the year before.

I have them in smoothies for breakfast (along with apples, carrots, celery, broccoli, etc...). Apples and berries give enough flavor the veggies sort of disappear. It tastes sweeter than it really is. (But don't tell my taste buds that!)
