Last week I listened to a podcast about broccoli, and besides broccoli, they discussed how there are compounds found in nature that are bitter, and how some folk's genetic make up determines whether they like broccoli, sprouts, coffee, etc. Depending on the variant of the 'taste' gene, a person has, these bitter compounds can be sensed so strongly in some that they can't bear the taste of some foods, and in others the bitterness barely registers and they are able to eat these foods without any problem.

You can see why some folks just can't stand some of the dishes you enjoy.

You can also take comfort knowing it's not your cooking, its them and their DNA. :D

Cilantro must be one of those foods that in some people's mouths is a fresh, green, sunny brightness, and hits other people's tongues like bitter, grey, gross soap.

We brought nacho chips and dip last week to a friend's place, while watching the Juniors tournament, that was super tasty.

The simplicity of the dish does not take away from it's yumminess.


Emerson's Amazing Nacho Chip Dip

One 9x13 Lasagne tray
3 x Blocks of Philadelphia Cream cheese
2 x Cans of Amy's chili (or whatever good, canned chili is available)
1 X Bag of Shredded Tex Mex Cheese
1 1/2 to 2 cups of sliced pickled jalapeño pepper, or 1 can of Old El Paso jalapeño peppers

Method:
1. Spread the cream cream out evenly on bottom of pan.
2. Spread chili out evenly over the cream cheese
3. Spread the shredded cheese out over the chili.
4. Spread out jalapeño over the shredder cheese.
5. Nothing. Your done.

To serve... just heat in oven at 350 till desired temp, basically once everything is bubbling a little.

Serve with you favourite nacho chips and plenty of ice cold beer.
