I just bought four, gorgeous, oganically-grown zukes at the farmer's market.
I have a recipe for Zucchini pancakes, with cheddar chees and a little chili pepper- I have fresh chilis i was going to chop in.

Shanglan mentioned fritters.

My daughter asked for Zucchini bread- but the weather is waay too hot to bake even quick bread right now.

What's your favorite thing to do with a zucchini? um... wait, that doesn't sound right.

I meant;
What's your favorite thing to do with a zucchini- in your mouth?

no... that's not it either... :D

Oh yeah, baby. I :heart: zucchini. :)

Here's the zucchini fritter recipe I was telling Shanglan about. Actually some people call them zucchini cakes, but my family calls them fritters.


1 C. Bisquick
1/2 C. shredded cheese(I think we used cheddar, but you could use whatever)
1/8 tsp. salt
2 beaten eggs
2C. shredded zucchini
2 tbsp. chopped onion
1tbsp. butter

Combine Bisquick, cheese, salt, eggs, zucchini and onion and make into patties. Melt butter in skillet and fry patties until golden brown.

I'm eating the most incredible grated zucchini pasta sauce right now...

ingredients, three finely grated zucchini, olive oil, garlic, fresh sliced chili, parsely.

then grate fresh grana over it.

WOW that sounds good.
is it sauteed or something? I have an antipathy to raw veggies.
 
If you do fattening stuff... then batter and fry it! MMMM.

BREADED ZUCCHINI
Sliced zucchini
Egg
Bread crumbs
Garlic pepper
Parmesan or romano cheese
Olive oil

Combine bread crumbs, garlic pepper and cheese in a shallow bowl and mix well, mix egg and put in a shallow bowl. Slice zucchini, dip in egg mixture, then in dry mixture. Place in frying pan well coated with olive oil. Cook until golden and crisp, turning once.

one of my fav things to do with it:

ZUCCHINI CRISP

Everyone swears this is made from apples.
I cup up the zucchini in bite size portions about the size of chunk pineapple.

Crust:
4 cups flour
2 cups sugar
1/2 teaspoon salt
3/4 pound of butter or margarine

Filling:
6 to 8 cups seeded, peeled, sliced zucchini
2/3 cup lemon juice
1 cup sugar
1/4 teaspoon nutmeg
1-1/2 teaspoons cinnamon

Preheat oven to 375 F. Prepare the pastry by combining the flour, sugar and salt in a bowl. Cut in the butter or margarine until crumbly. Press half the mixture in the bottom of a greased 9 x 13 inch baking pan. Save the other half for later. Bake for about ten minutes, then remove from oven and set aside. In a sauce pan, cook the zucchini in lemon juice until tender, about 10 minutes. Add the sugar, nutmeg and only 1 teaspoon of the cinnamon. Simmer for about a minute then add a half cup of the saved pastry mixture. Simmer until this thickens stirring constantly. Let cool. Pour the zucchini mixture over the crust. Mix 1/2 teaspoon of cinnamon with the rest of the pastry mixture in a bowl then sprinkle it over the pie. Bake for 35 to 45 minutes, or until lightly browned.
 
I like to cut them in long strips about 1/3 in thick and stir fry them with onions, mushrooms, sesame seeds and soy sauce.

It takes a little practice to be able to get them soft but firm without being soggy.
 
Another thing I like to do with them- and almost any veggie- slice them into strips, and grill them on a really hot grill, till they are nearly burnt. A little salt, pepper, and balsamic vinegar splashed over them during the ordeal by fire.. :catroar:

Yep, sauteed. It ends up tasting really like vongole (clam) sauce, for some reason.

I imagine it tastes like Vongole beacuse of all the *slurp* garlic*

That was dinner (sans vinegar). I opted for a spicy mayo dip instead. Yum.

Be sure to use zucchini instead of vongole. Otherwise you won't be making zucchini sauce.

BTW I think this sauce was an invention of the chef Carluccio, who owns a successful string of restaurants here.

not a problem, I have zucchini- i don't have seafood.

Mmm, I second that. Works well with yellow squash, too.

I also like to make jambote (sp?). For that, slice and saute an onion, a green pepper, and some cloves of garlic in olive oil until soft, then add strips of zucchini and yellow squash and cook until just tender (raising the heat helps avoid sogginess), then slather it in your best red sauce and cook it a bit longer. It's delicious stuff.

My mother also once made a zucchini chocolate cake (using the squash grated like carrots in carrot cake) that lives long in memory as being thoroughly delicious, but alas - I have no recipe.

I told the family I was making zucchini sauce for pasta, they suddenly started making a sechuan stir-fry instead. If I get out-voted tomorrow, too- I have a new cooking stick to beat my family with! :)

A google for "Zucchini Chocolate cake" brought up thousands of recipes... Who'd a thunk?
