There's actually a lot of reasons why you don't see the large cucumbers as pickles. First of all smaller pickling cucumbers are easier to grow and take up less room. And it's all about how quickly they can turn over their product. Also even though you can pickle almost anything pickling a younger cucumber is quicker than thus less production time thus less costly.
Pickling cucumbers and salad cucumbers are two completely different types of cucumbers
Pickling cucumbers are actually sweeter than salad cucumbers and the skin and seeds are different.
But, while pickling cucumbers are different, they are not smaller than salad cucumbers, just picked earlier?
I've never seen one made with a cucumber as large as the ones you can buy fresh in the produce section. Why is that? And where do the picklers get those half-sized cucumbers?
