Salmon is a specialty out here. I go fishing two or three times a season and usually smoke the ones I catch. Personally I prefer white fish, Halibut, Yellow Eyed Rock fish, RaspHead Rock Fish, Ling Cod, True Cod or Kelp Greenling. I could fill a page listing the variety of seafood we have here.
As for the crab in the crab cakes, I'm sure they didn't come from the East coast. Why should we import Atlantic Blue Crab when we have Dungeness and Alaskan Kings right here? The largest, most productive and most dangrous crab fishery in the world is just north of here, the Bering Sea. 90% of the crab fleet home port in Seattle or Portland. Some of the Alaskan Kings can span six feet. So I really don't think we would be using Atlantic Blues.
