Yup. It's offical. I now have a bad case of cookielust.

Ive looked at some recipes but I don't know how to equate 'cups' to weight measures? Some have grammage alternatives but then listed sugar in mls??

I googled "snickerdoodles english recipe" and found some. Nigella has one, and I found this one and several others. Let us know how it goes, and if you like them! :)

Goose has been started, per Joy of Cooking. Thank you, desertslave! :) It was submerged in boiling water, one end at a time, for 1 minute and is now drying out in the fridge.

This is going to be interesting....

Another excellent check-in source would be Joy of Cooking. I seem to remember that Christmas goose is less desirable than Michaelmas (they're leaner then). Also, I think that JoC discusses rendering the fat by doing a sort of sautee before roasting. If you don't have JoC I'd be glad to look it up for you.

Chickpea and lentil curry.

Gravlax is umm.. graving? in the fridge as we speak and whitefish and vendace roe keep it company. I've already made some yummy bread that's darker than my soul to go with them, it should be ready by tomorrow.

It's snowing outside, too. It's starting to feel like Christmas. :)

I had a go today.....had a slight hiccup when the recipe was referring to dough and I was looking at batter! I get my eggs from my neighbour who keeps hens and I think the one I used was a bit too large.

Anyway, I added a little more flour, made the rounds and baked them. The son who had announced that he didn't like cinnamon appeared in the kitchen asking what the nice smell was, and then devoured a handful once they were cool enough to eat. We all had some more after dinner this evening, so I think it can be notched up as a success :D. Thanks for the recipe!

So glad I could help! I spent most of a Christmas to New Year's break (sick with Strep throat) reading JoC almost cover to cover. Funny how I can remember that the goose bit was in there, but can't remember what I made for dinner on Saturday. Anyway, that method does make for an awesomely crispy skin and less grease. I wish I could find a goose here. <sigh> And reasonably priced chestnuts would be a treat, too.

Master is busy drooling in the Enchilada thread on the GB, so I'm making my chicken enchilada casserole for dinner (with extra cheese, by request). :)

Here's the recipe I got from a good friend years ago. Hers were fabulous! Wonderfully crispy and melt-in-your-mouth when dipped in coffee or tea.
You can roll out the dough and use cookie cutters or do the rolled balls.

Snickerdoodles

1 cup butter, softened
1-1/2 cups sugar
2 eggs
2-3/4 cups flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt

2 tbsp sugar
2 tsp cinnamon
mixed together

preheat oven to 400

cream butter and sugar
add eggs
combine dry ingredients and blend gradually
shape dough into rounded balls
roll in sugar-cinnamon mixture

bake 8-10 minutes

Hooray! I hope it becomes a favourite!. They are for me, and bring back lovely childhood memories as well :)

Goose is getting ready to be pricked and put in the oven. We're having it roasted with Oranges and Madeira. As a back up, I have a ham. Just in case this doesn't go well! :D Thank goodness I'm prepping it for Christmas Eve rather than Christmas dinner or I'd really be nervous.

We shall see....

< Gravlax is umm.. graving? >

I'm also graving. Or rather, the salmon is. :cattail:

Here's the gravlax and whitefish roe with the dark bread I made. We decided to skip the vendace roe for now, because we already had more than enough to eat. There'll be vendace roe on the New Year's menu then. :)

What type of salmon do you prefer. I have never made my own gravlax but wish to. I can access prett much any type of salmon but figured wild caught king would be the way to go on this
