I successfully attempted making pasta dough for the first time ever. Then I used that to make crimini mushroom tortellinis. Best 3 hours in the kitchen in a long time.

It was served up in an Asiago cheese cream sauce since I couldn't locate any decent gruyere. Needless to say, the carb count was through the roof today. I took a pic and it's not very exciting to see but I had to...for posterity, you know.

I have leftover dough and think I'll attempt my first lasagna next week.

Now I want to cook with mushrooms too but I don't have any. All dehydrated or frozen. Time to hit the forest again I think.
 
BBQ Weather!

After five days of almost torrential rain, we finally have a nice day here in Scotland!

Can't pass up the opportunity to do a BBQ. I have a 48 oz cote de boeuf (Beef rib steak) that I'm marinating in Jack Daniels.

I've done this several times before and it usually turns out amazing! Spotted the marinade recipe on youtube a few months ago and had to try it.

The steak is around 2" thick, so it is a two step cooking process.

Mix all of the marinade ingredients together and place in a large food bag with the steak. Manipulate the bag with your fingers to ensure an even coating over the meat.

Leave in the fridge for around 4 hours and remove at least one hour before grilling. You can add a final seasoning of salt and pepper at this time, if that's your taste.

Heat the griddle to around 300 degrees Fahrenheit (Laser thermometer helps with this, a great investment!) and using a sturdy set of tongs place steak on its thick edge on the griddle, holding upright with the tongs. Rotate the steak around on its edges, gradually to seal around the outside.

Once the outside edges have been seared, place the steak, at an angle, on the griddle and press down firmly on top. Depending on how much you like the external searing, cook for 3 - 5 minutes before giving the steak a quarter turn and pressing down firmly again. This should give you the nice diamond shaped sear marks on the surface of the meat. Grill for a further 3 - 5 minutes, before flipping the steak and repeating the process for the other side.

Carefully lift the steak and transfer to a kettle BBQ (any BBQ with a lid) and place over indirect heat. Insert remote thermometer probes (Another great investment!), and close lid. Monitor the thermometer readings and when both probes have reached 140 degrees Fahrenheit, this should give you perfect medium/rare in the centre.

Remove from the kettle and place on a chopping board. place a small lump of butter on top and cover with foil and rest for around 15 minutes before carving into strips.

My mouth is watering already...

Steak turned out great! Also made hot wings and fillet steak cheeseburgers... Was so drunk last night that I posted a picture pf my face on one of the threads... Hope nobody turned into stone when they seen it!
 
Gravy is simmering for tonight's lasagna. (No, not that kind, Dave!)

I'm using the last of my homemade noodles and then we have to tighten up our low carb diet again.
 
After yesterday's insane meal, today is salad day. Everything more substantial than that still feels too much.

Mixed green leafy things, golden beet, carrot strips, radishes, raspberries, cashews, cherry balsamic sauce.

I have no idea about dinner tonight. This would normally be a date night, but we still haven’t been out to eat. I haven’t cooked for once.

Maybe sushi?

How was it?


Lunch: salad with mixed green leafy things, fennel, golden beets and gravlax today. Raspberries and peaches with Greek yogurt seasoned with vanilla for dessert.

Have to figure out dinner.

Came out excellent.

Lunch sounds nice, I think I'm bad to my normal weekday lunch of eggs
 
Chicken fried steak for lunch, minus the library paste. Smashed 'taters, pan gravy. Homegrown tomatoes.
 
Tonight I will roll out macaroni and cheese, probably not the bog standard one as I add-in mustard powder, smoked paprika and a few other secret ingredients to jazz it up.

Always a big batch as it is great for reheat lunch in the following days.
