I like to roast it with garlic on the grill for a couple of hours, then smear it with a very light mint syrup at the very end.
 
Garlic...lots of chopped fresh rosemary...Dijon glaze...on the grill.
 
Tzatziki on it, with romaine, chopped tomatoes, kalamata olives, and feta under it.

Its called "Bonnie's Marinade" and it is sour cream based.
Slather a rack or a leg in it and slow grill over a real wood fire for hours and hours while you drink or fish or play horseshoes.

Cook lamb how you like but never serve chilled drinks with it or anything with ice.

Lamb fat solidifies at a higher temperature than other meats so if you have a cold drink , fat will solidify on your lips - and that is 'yuk.'

My own favourite is to bone a leg of lamb and then stuff the centre with whatever spices you want. Because it has been boned the lamb will be roughly conical in shape which means one end will be well done and the other rare which should please everybody. 90 minutes at medium heat is plenty long enough, at two hours the meat will be overdone and start to dry out.

We'uns maight be a little ignant here in the gateway to the South, but genr'ly, we cut our critters up into steaks and chops before grillin' to reduce the cook time...

Also Vedalia is in season, so you don't use garlic unless Mo-Mo has been sighted within' the last week or two...
