I made some pork chops for dinner last night, and was craving mac and cheese. But I had no boxes of mac and cheese; so I instead made some macaroni and put a dozen slices of American cheese over the macaroni and some milk to thin it out. Oddly, it wasn't too bad.

What are some of your last resort recipes or substitutions in a time like this bro?

Nothin' odd about that, bro. You just reinvented Velveeta Shells and Cheese.

Assuming that you still have a bunch of Fata's second most favorite cheese around, try nuking 4-5 slices over a bowl of salsa or refried beans with raw, grated onion for a cheesy dip.

Couple of days ago I thawed out some Eye-taliano sausage. Cooked on a countertop grill like brats yesterday.

Today, I diced some Vidalia, "sauteed" in butter in the microwave, added sliced sausage and some jarred marinara. Dumped that over prepared Ramen noodles and topped with shredded Mexican cheese blend. If I had bothered to look I probably have spaghetti, vermicelli, and linguine around here somewhere but the Ramen was quick and easy, and is likely something everyone has in the back of their cupboard.

I grilled a ribeye. Sam's Club was practically empty. Wish I had some marshmallows :).

Dude, That IS Mac n' Cheese, not whatever that powdered stuff in the box is.


Try some whole kernel corn ... fried ... with BBQ Sauce.

Yesterday I cross-hatch scored a London Broil (what used to be called top round) on both sides and then marinated it in some Soy sauce, Balsamic Vinegar, a squirt of ketchup, herbs/spices/pepper (no salt - the soy sauce has it) for an hour before slapping it on the grill for 4 minutes/side.

Macaroni salad and some whole kernel corn on the side.

Try some whole kernel corn ... fried ... with BBQ Sauce.

Ewwww. That IS NOT EVEN CLOSE to real mac & cheese. Real mac & cheese only takes about 10 minutes.

Make a roux with butter and flour. Add milk and bring to med-high heat. Temper in a scrambled egg. Add cheese stirring the whole time until it starts to thicken. (If it gets too thick, add more milk.) Remove from heat, dump cooked and drained mac in the pot, stir, gobble, enjoy.

Alternative: Pour mix into a casserole dish, sprinkle some bread crumbs mixed with melted butter on top and bake until bread crumbs are golden brown.

Do this and you will NEVER use the boxed stuff again. This is cheaper and takes almost the same amount of time to make.

Reminds me of Elote, a Mexican dish. Though Elote uses mayonnaise and chili powder as a rub on.
 
DaFuqs a rux?

Melt 2 tablespoons of butter in a saucepan. Sprinkle in flour and stir to coat the flour with the butter and make a thin paste. Continue cooking until the butter/flour mixture turns anywhere from light golden brown to dark brown (which makes a really good dark gravy).

It will thicken a sauce like cornstarch without diluting flavor, or make gravy without lumps and/or tasting like uncooked flour.

No egg necessary when you make a roux. The starch in the flour is good enough.

The egg is in there because I prefer my cheese sauce to be more like one that is used in a casserole. Plus it makes me feel more "chef-y" because of the tempering requirement.

Sierra Nevada style Donner rump roast?

Give it a couple of weeks and the morgues start to really overflow. Although I heard that NOLA is wondering what to do with their rat population now that there isn't enough garbage to keep them fed.
 
I can get oak chips whenever I want them.
I have seven acres of oak forest.

There was an earthquake near my place in Idaho the other day I was hoping I still had a cabin. I asked a friend to check it out. He called and said all was well and was nice enough to check my propane tank as well as some folks had seen damage to their tanks in the area. I was glad to hear none of my new windows are cracked or broken either. apparently they are still feeling after shocks from time to time. As soon as I can I'm going to take the rest of my leave and go see for myself.

I've been known to braise a corned beef brisket in Harp instead of Guinness. I know it's a sin but what ya gonna do?
 
I’m making homemade Mac n cheese tonight. No eggs included. I hope I have panko left for the topping. Your’s sounds better than any box providing you didn’t use those nasty plastic wrapped “cheese” slices.

I am a fan of the basic ramen block, and black beans and rice.
