Hands behind the back is good for all-purpose tying. If you tie her hands behind her and lay her down on her back, on top of them, she's not going to be able to move around too much. That way, if you want her up to suck you off or whatever else, you don't have to untie and retie. I'm pretty fond of this method--easy, quick, and useful in several ways.

I'm surprised nobody suggested combining the hands-behind-the-back tie with the ankles. The one (and sadly only) time I tied up my way-too-vanilla (now ex) wife was with this method. Tie her hands behind her back with her wrists side by side, then route another rope over the first between her wrists to bind the ankles. I told her to "put yor legs where you like them for fucking" and tied her ankles. Trying to straighten her legs merely pulls on her wrist bondage. This is quick, easy, keeps her completely captive and she's yours to boff until your boner --- or her pussy --- falls off!
Something else you might try is quicker and easier still. Go to your local Wal-Mart or pet store and buy four pet collars and some keyrings. Thread one of the keyrings between two collars (using the leash attachment points or just between the buckles) to create a set of handcuffs. A length of rope needs to be run through the keyring and routed to the remaining pet collars for the ankle restraints. It'll do the same thing yet be really quick for securing your sub.
This homemade harness is cheap to make, maybe $15, and is quite handy for when your girl feels like she wants to be impertinant. Flip her over, buckle her in, flip her onto her back and (as an old song says) "Bang away my Lulu, bang away good and strong..."

What you are describing is mechanically similar to a western hog-tie. It's an effective tie, but has a couple of concerns. The first is that western hog-ties can put a LOT of strain on the wrists. Combine that natural strain and tension the body produces due to the stress position with the additional stressors inherent to intercourse while in a stress position, and you have a recipe for wrist damage and/or dislocation. this is bad.
The second concern is that police in the west use the hog tie (with hand-cuffs and leg-irons, both of which are radically unsafe for such a position) and have had many cases of the person suffocating under their own weight and going into shock/dying. This is not so much a concern is the top is watching the hog-tied bottom, but it is still something to be concerned with.
I would also advise against using any old pet collar. Most of them are very slender and will expose your bottom to potentially serious trauma to the wrists, as well as having a solid chance of nerve compression issues. Very wide, heavy collars of the sort used for large, dangerous dogs are a better choice. The problems with these is that you will not generally find a heavy, wide collar in a size small enough for a human wrist. This means you will need to modify said collar.
I get widgey when people start messing around with the wrists sans cautioun. Too many nerves and blood vessels that are close to the surface, and the bones, muscles, and connective tissues are not all that beefy at that joint. Can you tie/restrain the wrists? Of course, ad it is not difficult; a person can hang their whole weight safely by their hands. But you have to understand the mechanics of the joint to simulate those sorts of stressors in bondage. And, frankly, if you fuck up your bottom's hands, you have SERIOUSLY hampered their lives, possibly for the rest of their lives.
Personally, I find it easier to simply make my own quick-cuffs using a belt, a pair of 'biners, and a quick link. Not super-secure, but work well under tension, and your bottom will know where their hands are supposed to be. I'll post pics and a quick tutorial at some point. Or you could just look up some of the very easy wrist restraint ties (I have a tutorial or two in the thread in my sig) and learn to properly use rope to secure the wrists.
