Why is Eatery suddenly so popular?

You'll know when the word is completely played out when Denny's becomes Denny's Eatery.
 
"Restaurant" was so pre-2020...

Heck, back in the 60's and 70's, they were called "Diner"

I've heard it in common usage since... forever.
 
'Bistro' used to mean a place in France where you could eat basic reasonably priced food with a drink (and the smell of stale Gauloises). Now it is a place for over-priced Nouvelle Cuisine for people with small appetites, large purses, and no sense of the stupidity...

I'd not heard it used here in 'Murica until lately. Typically it was "restaurant," "cafe," "diner," or just the name of the place was no indication as what sort of place it was since it's obvious it's a place to obtain and consume victuals.

For a while, it seems like everything was a "grill" when it had the cachet of healthier eating. And by healthy I mean as in grilled as opposed to deep fried.

Everyone tries to come up with some 'trendy' name for their "eatery." An attempt to convey their specialties.

How about a specialty house for Bulimic's. They can call them "Regurgitaria's".
 
Dunno, but I ate at a tavern the other day. And burger bars have sprung up in the last few years.

Bistro, restaurant suggest higher prices/quality.

Diner, tavern, pub suggest lower prices and simpler menus.

Buffet and bar suggest large quantity and low price.

Eatery straddles the fence between price and quality, which is why it’s well suited to uncertain economic conditions.

There's a place in Houston named the Greasy Spoon, Rob might eat there.

We used to have a 'greasy spoon' although that wasn't the name over the door. It was popular with the Police, the Fire Service, and council workers for large portions including fatty chips with everything and strong tea.

The owner died of a heart attack from eating his own food and it closed.

It was missed, but has now been replaced by four similar outlets serving fry-ups at low prices. The tea at all of them is still dark brown, melts the spoon, and tastes like shit. Do NOT, ever, ask for 'coffee'. It isn't.
