They claim the Obama administration has overstepped its bounds, and that dietary guidelines should be based on personal health, not bigger concerns like global warming.

The politics of food in the US is by far one of the saddest areas of "uh oh" piss poor planning/oversight/ignorance and what the mother fuck in our government.

From the US Senate Committee on agriculture, nutrition and forestry all the way down to really most farmers working above the CSA/FM/LFDH levels of agriculture?

Dies...refined sugars...preservatives with 38 fucking letters in them...yea! Health problems? We got a food problem guys....most of the food in this country is toxic fuckin' shit.

On the up side I'm pretty sure this problem is going to sort itself out...

Wanna change the world by changing one aspect of your life?

Stop buying corn sweetened products. When you lift a grocery product from the shelf, read the ingredients. If corn -- in ANY form --is one of the first 5 ingredients, put it back and find something else.

The increase in diabetes in the country is directly proportional to the increase in corn as a substitute for sugar as a food sweetener...

The political power of Iowa -- one of the whitest, most rural, and least diversified states in this increasingly non-white, urbanized, diversified country -- is directly related to the power of its corn lobby in electing the President, based upon the results of the first in the nation caucuses, held in Iowa...

The amount of oil used to create the artificial fertilizers, herbicides, and pesticides used to grow corn in an area of the country where corn shouldn't be grown at all is staggering. (I'm not going to quote you numbers because I don't know them. If you doubt me, look it up.)...

I could go on and on but won't...

Stop buying corn products. You want corn...? Grow it in your garden.

Independence Day

Jamaica mirrors America.

We both became independent from the rule of Brits,
There is a wide split between who have wealth,
and who lives without the benefits of modern life.

In America, they blame the victim of police brutality.
They were "no angel," they say. No pity for the dead.
In Jamaica, 150 unarmed people were slaughtered
by government forces, aided by Americans.
In America, unarmed people are killed by police, everyday.
The people living the wealthy life in Jamaica looked down
on the dead victims. "They lived in the bad part of town,"
they said. "They must have deserved it."

In Jamaica, the people see no justice for the victims.
In America, the people see no justice for the victims.

Sugar cane is still cut by hand, in Jamaica.
Poor towns still have little or no electricity.
It is too expensive. The wealthy will bake
costly cakes in their electric ovens, in their
air conditioned homes.

The poor will do without eggs, cream, butter, wheat flour, and expensive flavorings.
The poor will bake a humble cake, outside with coals from a fire.

Coconut drops, grater cake, sweet potato pudding, Coconut cake Toto

Grater cake

2 cups grated coconut

3 cups granulated (white) sugar

1/2 cup water

1 tbsp vanilla (optional)

Pink food colouring for second batch

Method:


Lightly grease baking pan and set aside.

In a thick-bottomed saucepan add coconut, sugar, vanilla, if using and water.

Cook over medium heat until the water evaporates and the mixture is sticky. Remove from heat and mix with a wooden spoon until the mixture can hold together for about a couple minutes.

Add mixture to prepared pan and press down mixture with back of the spoon.

Next prepare the second batch using a couple drops of food colouring and then spread on top of the original batch.

Once set, cut into squares.

Peanut cake

1 1/2 cups lightly roasted peanuts, unsalted
1 1/4 cups lightly packed brown sugar
1/2 teaspoon cream of tartar (optional to prevent crystals)
1 tablespoon ginger root, finely grated
1/3 cup water
Instructions
Mix sugar, cream of tartar and water and place into a 3 quart pot. Allow mixture to come to a boil over medium-high heat all the while stirring constantly. This takes about 2 to 3 minutes.
Once it reaches a boil, allow to boil undisturbed for another minute and then add the ginger. Stir to combine and allow to boil for 6 minutes. The mixture will reduce, thicken and become syrupy. A quick test of dropping some of the mixture in a small cup of the water should allow you to pull the mixture together into a flexible ball that sticks together.
Add the peanuts and mix well to combine ensuring all the peanuts are properly coated. Cook for another 2 minutes. At first, the mixture will seem to have all been absorbed by the peanut but once the peanuts are thoroughly coated, you will see there is still enough liquid.
Remove from the heat and quickly drop 6 equal spoonfuls into a flattened heap on a greased foil or parchment paper. Allow to cool.You may make 12 smaller cakes by using a tablespoon.

Sweet potato pudding

1 lb Sweet Potato (grated)

1 lb Cornmeal

1/2 lb Sugar

milk from one grated coconut (use coconut water to get one cup)

1/2 teaspoon Cinnamon

1/2 teaspoon grated ginger

2 teaspoons of coconut oil

Grease pan with oil

Peel and grate sweet potatoes
Grate coconut, add coconut water and squeeze juice through a strainer
Dry mix flour and spices


If you have good fortune, add rum, and raisins, grate some nutmeg.

Combine dry mix with the grated potatoes
Add sugar, coconut milk. Mix well.

Bake until the sugar starts to caramelize.
