There are many things that I would put in that category but one is:

To be able to dance the Laendler.

Not the Sound of Music version which is incomplete, but the full version. I've never been a competent dancer. US size 14 feet don't help, nor an inability to remember all the step sequences.

being able to run over distance

even back in my school days of being a school team gymnast, swimmer (i could do a mile) & life-saver & badminton player (not to mention netball and tennis teams even before that), and i could run hurdles in a 100metres, throw javelin, high jump, long jump and discus, i was always a shitty runner. 800 metres near damned killed me. just not built for it, even when i was slim, agile, and very healthy! i'd love to be able to just go out and run run run.
 
Ride a horse. Never even been on one. Donkey at Blackpool when I was a little kid is the closest I've ever done.
 
Travel around China and New Zealand. They used to have camper van tours followed by a tow truck through China and Europe. I don't think they have those anymore.

I know the feeling. Back in my active youth, I used to train for rugby. Our coach used to insist we did 1,500 metres just to warm up.

We never caught him. How could we? He held the Olympic record at that distance. :(

Edited for PS: He had a point. Any rugby or football (soccer) player spends more time running than anything else. Even in a schoolboy match, a player would run several miles.

That could easily be fixed. Any riding school will have a staid horse for beginners, even ancient ones.

I was an acceptable boy treble but when my voice broke I became a basso profundo and there aren't many songs for that...

At school, when all 1,200 boys were singing the school anthem, I was one of seven told to shut up and mime because I was an octave below anyone else. The other six couldn't hold a note.

My brother in his late 70s was told by his travel insurers that they would not cover him if he went off-piste -again.

I'd like to be superlative in at least one area in which I've only managed "pretty good" at--writing, painting, music, acting, management.
 
Perform live. I've been playing instruments for almost 30 years. I've recorded a lot of music, either myself or others. I've been behind the board at live performances, nothing big, just local things for friends. I seem to prefer to be the man behind the curtain. I've always lacked the confidence to actually do it. It scares the shit out of me.

I'd like to but I'm afraid that I would chicken out.

Maybe I'll take a ride in a glider to work my way up to it.

I love to fly but it's getting a little late in life to get a pilots license.

I've taken a major role as Henry VIII in a performance with a cast of 700. but the most frightening was performing my own poetry in front of an audience of 1,000. They liked it.
 
And, in response to the OP:


Circumnavigate the planet on a private sailboat. Its a pretty exclusive list of people who have done it and I'd like to be able to say I'm one of them.
 
Play any musical instrument other than mediocre drums.

I write music, I arrange and produce music, and I can sing well enough to not embarrass a band. But I can't play for shit.

Go to Iceland in the summertime and look up horseback tours. They just plop you on one and it drives itself. It's more like a golf cart caravan made of meat.
