The Lounge Cookbook!

We all know the old saying; the quickest way to a man's heart is through his stomach.

While this is mainly true (I know a number of guys that love the fact I know my way around a kitchen and use very unexpected ingredients), I know girls can enjoy a good creative dish or two as well. So c'mon, Loungers. Spill some of your favorite recipes! Maybe we can get a nice little Cookbook going here!

Made this last night, and WOW was it good...

Firecracker Chicken Legs
Prep Time: Overnight

Need:
About 2 cups of Hot Sauce
8 Chicken Legs
A cup of flour
1/3 cup Cornmeal (I cheated and used half a packet of cornbread mix)
Tablespoon garlic powder
tablespoon kosher salt

Put the legs in a big ziplock bag and pour in the hot sauce. Let out all the air, then massage sauce into the legs. Plop in fridge overnight.

When ready to cook, heat about 3 cups of oil in deep frypan. make sure its VERY hot.
Combine the dry ingredients in another ziplock, shake the sauced legs in the dry one at a time, then fry. Flip after about 15 minutes so each side cooks well.

These aren't as spicy as you might think...
But were very yummy. :)

I had noticed a key ingredient in Mountain Dew was Vegetable Oil and jokingly told mister I'd use it in dinner. He actually wanted me to do it. Sooo....

Dew Chops

Need:
20 oz bottle of Mountain Dew
6 Smoked Bone-In Pork Chops
1/4 cup Mild Salsa
1/4 cup Pepper Onion Relish or Chili Sauce
2 tablespoons garlic
1 tablespoon ginger powder
2 tablespoons oil, for pan

Brown the chops in the oil, then pour in half a bottle of Dew; let simmer for 15 minutes on lowered heat. Mix together remaining ingredients (except left over soda) and add to chops, let simmer for another 15 min. Use extra soda to thin sauce if it gets too thick. If not.... Bottom's up.

One of my favorite things... Another recipe memorized.

Chocolate Chip Cookies

2 sticks butter
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
1 tablespoon vanilla extract
2 1/4 cups flour
1/2 tablespoon baking soda
1/2 tablespoon baking powder
1 tablespoon salt
bag of chocolate chips
1/2 cup chopped walnuts
1/2 cup chopped pecans

Set oven to 375. Cream butter and sugars, add in eggs and vanilla. Combine well. Mix together dry powders with flour, then add to wet stuff slowly; about a 1/4 cup at a time. Once well combined, add in chips & nuts. Measure out onto cookie tray (I use a tablespoon and do 9 per sheet). Bake about 10 min.
OMNOMNOM.

I warn you so addictive..... anyone who likes a soft cake like cookie...these are yummo.

(some I made to show you what they look like)

Golden Honey Biscuits

20mins preparation
12-15 mins baking, plus cooling.
makes 20 -25 biscuits

Ingredients:
100g unsalted butter, softened
125g (2/3 cup) light brown sugar
1 large egg, beaten
1/2 a teaspoon vanilla flavoring essence
8 teaspoons honey
185g (1.5 cups) plain flour
1/2 teaspoon baking powder
1 teaspoon ground cinnamon (I actually didn't have this and they still tasted great)

Method:

1. Preheat the oven to 180. Grease 2 baking trays.

2. In a mixing bowl, beat the butter and sugar together with an electric mixer or wooden spoon until light and creamy.

3. Add the egg, a little at a time, beating well after each addition. Stir in the vanilla and honey.

4. Sift together the flour, baking powder and cinnamon. Gently fold into the creamed mixture using a large metal spoon.

5. Put heaped teaspoonfuls of the mixture onto the prepared baking trays, allowing room for the biscuits to spread. To make decorative grooves, press the top of each biscuit with the prongs of a fine fork, dipping the fork into flour to prevent the mixture from sticking.

6. Bake for 12-15 minutes, or until golden, swapping over the baking trays halfway through the baking time. Cool for 2-3 minutes, then transfer the biscuits to a wire rack to cool completely.

COOKS TIPS: for a different flavor , add 1 teaspoon ground ginger instead of cinnamon. For a citrus tang, add the grated rind of 1 large lemon or 2 limes.

After attempting 5 times to remember the recipe for H&D soup, I've realized its usually a "Oh fuck, how's this go" recipe.
So...
Here's the closest I can remember.

H&D soup
Named thusly because I kinda stole the idea from a place I used to work at

Need:
4 slices bacon, chopped up
Small onion, diced
1/2 cup chopped red & green peppers
2 tablespoons crushed garlic
1 cup cubed ham
1 cup corn
1 1/2 cups cubed potatoes
2 cups chicken broth
1 cup water
1 cup milk
chives, paprika, cayenne pepper to taste

Crisp the bacon in a large stockpot. Saute onion & peppers in the drippings. Add in garlic, then ham. Pour in Stock and Water, then corn & potatoes. Let simmer for about half an hour before adding in milk. Season to your liking, then slow simmer for an hour.

With Thanksgiving around the corner here in the US, and being in charge of most of the brunch that day, I figured it may be time to wake this thing back up. :p

Here's the one thing my dad's been begging for (yes, its super-sweet):

Sweet Potato Casserole
2 cans sweet potatoes
1/4 cup brown sugar
1/4 cup OJ
4 tbsp butter
2 tbsp maple syrup
2 tbsp karo syrup
2 tbsp honey
2 tbsp cinnamon
2 tbsp cloves

Preheat oven to 350. Combine everything. Put into casserole dish.

Topping:
2tbsp butter
1/4cup brown sugar
4tbsp flour
1/4cup Pecans
Combine all but pecans til its a crumbly lumpy mess.
Sprinkle generously across casserole, followed by a layer of the pecans.

Bake for 30 min or until top is browned.
(I generally don't use exact measurements for it, so they might not be completely accurate.)

I'm gonna make these for you, eHubby. Just you wait.

Homemade Fries
6 goodsized russet potatoes, peeled and cut into thick strips
1/2 cup flour
2 tbsp each:
-garlic powder
-onion powder
-lemon pepper
-kosher salt
-cayenne pepper
-black pepper
1/4 cup water

Keep potato strips in icy cold water while working with other stuff.
Heat oil in wide, deep frypan (Enough oil to give good floating room for the fries). While this is getting hot, combine flour, spices and water in a big bowl or plastic bag (I find the bag way easier). Drop potato strips into the mix and coat them, then fry in batches. (Try to keep them apart at least for initial few minutes- they get stuck together SO fast.)

If I'm in "I need the worst junkfood fix possible and don't give a damn" mode, I'll use these to make Bacon Fries: sprinkle shredded colbyjack cheese and bacon crumbles over some of these and give a quick pop under the broiler, then nibble them with sour cream.

I usually just eyeball anything I make, but I think I'll try and add to this if I can write a recipe down. :)
