I looked but did not see a thread like this.
I like cooking.... Just not for myself, cooking for one is lame.
So for the other food lovers out there share some of your favorite recipes, please!
Fire Roasted Eggplant Medley.
What you need:
1) Eggplant 2-3 inches around.
2) 1 large tomato, or several grape tomatoes.
3) 1 small zucchini
4) 3-4 cloves fresh garlic
5) Butter
6) Olive oil
7) 1-2 oz parm cheese shredded.
8) An assortment of other veggies (Cooks choice.)
9) One large bowl- enough to hold all the chopped ingredients.
10) One heavy baking sheet sprayed to prevent sticking
11) Side- Rice, I prefer long grain wild rice personally... or pasta cooked and drained.
Seasonings- Black pepper, sea salt, Italian herbs (fresh is best!)
How to:
1) Peel eggplant and dice into 1 inch cubes
2) Do the same with the Zucchini
3) dice and or cup up the other veggies, except the tomatoes
4) peel and fine chop garlic cloves divide in 2 (Set 1 half aside)
5) place remaining half of garlic in with the veggies.
6) Tomatoes- If using one large tomato dice into extra large chunks.
If using grape tomatoes halve them. Place in bowl with other veggies.
7) Add approx. 4tbs of olive oil to bowl and toss veggies while sprinkling on seasonings. If using fresh herbs chop and place in bowl prior to this step.
8) On well prepped baking sheet turn out the bowl and spread mixture evenly.
9) Turn on broiler ( mine has 2 setting hi and low I use high)
10) Place food under flame until about half done, approx. 15-18 mins.
11) Turn veggies and return to flame
12) Make the rice or pasta.
13) remove all fully cooked items from broiler and plate.
14) Remove rice and veggies and plate.
15) In a small dish add butter and garlic, toss in microwave for approx. 15-30 seconds.
16) Stir butter and spoon over the rice or pasta.
17) Sprinkle veggies with Parm to taste
18) Enjoy!
**Goes well with a full bodied, sweeter blush wine**
