This often comes as the initially reluctant bride story, who gradually accepts and grows into her role. Examples abound: Jane Austen, Charlotte Brontë, Daphne du Maurier – Rebecca, Georgette Heyer?, Shakespeare (that guy), The Sound of Music.

Miserly, all the above stay clear of adult themes.

Are there good reads on lit doing this type of story plot?

I loved Rebecca. But it is not that story. She does not grow into her role, she finds herself in love, married, unable to function in the role (because of R) and then forced into another role emotionally supporting a criminal. I once read a review of the book, summarised as not a love story, but about jealousy.

However, I don't have the answer to your question. If you like sf, you could look at "Slave to the Servants" where the reluctant heroine indeed grows into a new role.
