The Chefs Kitchen Mk II

Back at some point in 2020 I had a similar thread to this that I had probably wrongly posted in the AmPics board to share my daily musings, thoughts and activities.

Ultimately it died out because I never gave it my full attention and I allowed it to go in completely the wrong direction based on where it was posted.

So here goes mark 2 with a difference....

Anyone who has spoken to me knows yes I am a chef, this is me

So what do I ask & hope of this thread?

I want a place for both myself and everyone to share and talk about anything food related stuff. Or even just to pop in to say hi, to chat or to share general musings

Last count I had 88 cookbooks on the shelf with the latest one added yesterday being this epic piece of reading

i have far to many cook books, i received 2 Christmas

1. Nadiyas family favourites
2. Mary Berry Classic

have yet to try them out

Anything food and cooking is a WONDERFUL thread...:)...love it...

I haven’t counted my cookbooks but I have lots...not 88 though...LOL

My last cookbook purchase was recent...Ultimate Veg by Jamie Oliver and I love it...

Too many...about 35? I purged a lot before I moved.

My last one is Ottolenghi's Jerusalem. I stole it from my mom but will give it back because it's not that vegetarian friendly, surprisingly.

I prefer to get my recipes online anymore. Just much easier! Though, if a specific cookbook I'm looking for comes out, I will 110% get it.

I actually just purged a bunch of cookbooks. I kept Joy of Cooking and Mark Bittman’s How to Cook Everything, which is my favorite cookbook. I love him. He really changed how I thought about cooking things from “scratch” rather than getting something premade. It’s pretty much just as easy to make something yourself than to buy something where you just add milk, etc., and it’s a lot more healthy and tasty.

I can get the purging of the books, I have so many that I haven’t read in quite some time. I was actually warned that I couldn’t buy any more unless there was a 1 in 1 out policy as the bookshelves are full, how I managed to sneak the new one in I’ll never know.......

I couldn’t agree more on the scratch cooking, although there’s nothing wrong with using pre made for some things, I mean I have a ton of curry pastes sat in my fridge, why? Well sometimes for the small quantities needed you either can’t just buy half a stick of this or such a small quantity of an ingredient without searching out every ethnic store within 20 miles - it’s ok to have those cheat ingredients, it’s what you do with them that counts

I’ve only got 88 cook books or food related books because of the job that I do! I know it’s still excessive though.

Jamie’s books are quite good in so much as they are/can be easy to follow for the average home cook and they usually don’t involve too much specialist equipment like some books do, there’s a few of his books on my shelf too, there’s some great reference recipes in some of them - enjoy the book

Hey thanks for stopping by, wow 35 that’s quite impressive if you are just an amateur cook.

Ottolenghi has some great books, I love the way they are set out and the freshness of the food, I have only 1 of his books called Sweet - it has some great recipes in it, I may dig it out over the weekend.

I agree with the whole online recipe thing, so long as you can remember where you found the recipe next time you are looking 🙄😂
I have books like that where I just have to buy it, the one I shared above is exactly that
 
I keep trying to find healthy recipes. I have a few cookbooks, but mostly, I go online and print stuff off. More recently, I copied recipes from a co-worker's cookbook from the Plant Paradox. I keep searching for recipes like soups that I can freeze and use for my work lunches.
I've been on so many diets in the past, I knkw they don't work. So now I search for healthy recipes I can put into my routine that I will enjoy eating. My latest attempt, the Sweet potato soup was a success.
If you have any suggestions for make ahead healthy meals, I would enjoy hearing about them.

Thanks for stopping by, it’s good to see you here, copied recipes are good, ones that come with a recommendation are even better as they at least have some substance behind them.

Soups are something that are easy to make without even having a recipe, I’m sure there’s an entire book on soups sat on my shelf, I’ll have a look for it and let you know some ideas, what sort of thing do you like?

Diets do work, it’s more about how you apply them and not just relying on the food to do all of the work, sometimes you just need to cut out a little bit of the bad stuff or eat less of it! My own weight barely fluctuates and I certainly don’t watch what I eat, just how much I eat!

Make ahead healthy meals..... hmm are we talking meat based or vegetarian based? Give me a little bit to go on and I’ll see if I can make any suggestions for you.
A lot depends on if you want to keep them fresh or to freeze them as not everything works in the freezer

Sadly, (but at least I am being honest), I couldn't cook to save my life. I do own about four cook books (all presents I believe) and two books for baking, but I don't really use them.

I have always loved watching Jamie Oliver on TV...He has a few restaurants here in my city and I have been to one of them a couple of times thus far...Amazing food and ambience there...Outstanding really...Very pricey but so worth the experience and the service was second to none...His cookbooks have the most beautiful pictures too...Love them...but sometimes I have to google up some of his British grammar lol:D

Anyone can cook, it’s all in the application and the level of skill but that’s the same with anything, I mean I can’t build a house but I’m sure with some time and practice I could lay some bricks and build a wall

I am sure you are right. The problem is, my lack of skills is paired with the fact that I also don't enjoy cooking that much. Badcombination...

I'm cooking from scratch tonight...one of Nigella's..., chilli prawns and sun-dried tomatoes in linguini:)

Some people have the confidence in their own ability to do that without books, and to be honest half of the books I have are either reference or to get inspiration from

Friends are always the best place to get inspiration from as those recipes can be tweaked and often already have been...... feel free to share some here or ask for more inspiration

Ah yes his British ‘wide boy” grammar, not always easy for non brits to understand, you should try and understand some of his older stuff....... no chance there when he was picked up as a crazy kid and plonked into tv world with his Essex boy accent and enthusiasm..........

He had a chain of Italian restaurants here in the uk that have sadly now closed but they were pretty good but also expensive....... I loved that he had a set of restaurants called “fifteen” in various places around the world that gave back to people by employing young people who had struggled in life and gave them a purpose and career in life, I went to the one in Amsterdam a few years back, again good but expensive.......

If you can follow a recipe and not get too caught up on trying to follow to the letter then that’s half of the battle....... it sounds like you’re in for a good dinner tonight!

He's just so fun and positive. I love watching his shows and have many of his books. Everything is so bright and colorful, as well. I'm pretty much self taught in the kitchen, but a lot of it is from his books.
